1/2 cup chopped onion
1 garlic clove, minced
1/2 teaspoon salt
1-3/4 cups spaghetti sauce
6 ounces spiral noodles, cooked and drained
1 cup small curd 4% cottage cheese
2 cups shredded part-skim mozzarella cheese, divided
Grated Parmesan cheese
Minced fresh basil

Steps:

  • Preheat oven to 350°. In a large skillet, brown beef with onion, garlic and salt. Stir in spaghetti sauce; simmer until heated. Remove 1 cup meat sauce; set aside. Stir noodles into the remaining sauce. Place half of the noodle mixture in a greased 2-qt. baking dish. Cover with cottage cheese and 1 cup mozzarella cheese. , Add remaining noodle mixture; top with reserved meat sauce and remaining 1 cup mozzarella cheese. Sprinkle with Parmesan cheese. Cover; bake for 20-25 minutes. Let stand 5 minutes before serving. If desired, sprinkle with basil.

This is based on a recipe that I received from my aunt at my bridal shower about 6 years ago. I finally used it this last year and modified it to make it a quicker meal. Hey, a working wife has to survive somehow! This is a quick, and EASY, alternative to lasagna when you don't have much time, it's great for a weeknight meal! Serve with side salad and garlic bread and you have a quick and yummy meal!

2 cups uncooked penne pasta
1 pound ground Italian sausage
1 (26 ounce) jar garlic and onion spaghetti sauce (such as Ragu® Robusto® Sauteed Onion & Garlic Pasta Sauce)
1 cup cottage cheese
2 cups shredded mozzarella cheese, divided

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 2.5 quart baking dish.
  • Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until tender, and drain.
