- Wash and peel the potatoes.
- Grate the potatoes with a grater or food processor.
- (You can grate them into a bowl of salted water to keep them from discoloring. Otherwise they discolor about as fast as you can grate them, although it doesn't hurt anything if you use them right away). Drain off all liquid, and squeeze the excess liquid out by hand.
- (Do this even if you don't soak them in the salted water.) Beat the eggs and mix with the grated potatoes and other ingredients, except the oil.
- Heat about 1/2 inch of oil in a skillet over medium high heat until very hot.
- Drop potato mixture by heaping tablespoons into oil (about 4 at a time).
- Use a pancake turner to flatten them out.
- Fry to golden brown on both sides (about 3 minutes per side).
- Drain on paper towels.
- Serve topped with applesauce or sour cream.

- Defrost grated potatoes in a medium-size colander. Press with paper towels to remove excess moisture. There won't be much.
- Add onion, eggs, salt, pepper and flour. Mixture should be thick and cohesive.
- Pour about 1/4 inch of oil into a heavy-bottomed frying pan. I use an electric frying pan at 375 so it doesn't get too hot and burn the latkes.
- Use about 2 Tablespoons potato mixture and place in the oil and press into a patty.
- Fry for about 3 minutes. Flip and fry for another 3 or so minutes. If pancake cooks too fast, reduce oil's temperature. If it takes longer, turn the oil up so they don't get soggy. Repeat with remaining potato mixture.

- Peel potatoes and submerge in cold water. Grate the onion into a large bowl. Grate the potatoes using the larger grate of a box grater, or use the grater attachment of a food processor.

- Transfer latkes to a plate lined with paper towels or several layers of brown paper (I use grocery bags). Allow paper to absorb excess oil, then transfer latkes to a cooling rack placed over a baking sheet in the preheated oven, where they will stay warm until ready to serve. Serve hot, with sour cream and applesauce.
- Extra latkes can be frozen on a baking sheet in the refrigerator, with parchment paper or freezer paper between the layers. When frozen, transfer to ziploc bags. Reheat in oven on 400 degrees F.

- Wash and cut the potatoes small enough to fit through the top of the food processor for shredding. DO NOT PEEL.
- Add potato & onion to the food processor using the shredding blade, alternating between the two (the onion keeps the potatoes from browning).
- Mix beaten eggs, flour and salt in a large mixing bowl. Add potatoes and onions and stir well.
- Heat 2 tbsp oil over medium-high in skillet (use multiple skillets to speed up the time to cook).
- Using a slotted spoon, scoop about 1/3-1/2 cup of potato mixture into spoon, allowing excess liquid to drain back into the bowl.
- Drop potato mixture into hot oil in frying pan.
- Flip over when bottom is browned, then smash down to flatten into a pancake.
- Fry on 2nd side until brown.
- Drain on paper towels and then transfer to a cookie sheet in a single layer.
- Repeat until all of the latkas are done.
- At this point, the latkas can be served immediately, frozen or refrigerated to be served within 24 hours.
- NOTE: Reheat refrigerated latkas at 350 degrees for 20-30 minutes and frozen ones at 450 degrees for 7-10 minutes.
CELERY ROOT AND POTATO PANCAKES / LATKES - GLUTEN-FREE

- Cook instant potatoes in a pot following package instructions. Instead of water, use chicken broth, 4 tablespoons of butter and 1/3 cup of milk.
- After potatoes have been whipped, but are still hot, mix in the cheese.
- Allow to cool and blend in the egg.
- If potato mixture is too thick, add a little more butter.
- In a large skillet pour in 1/2 inch of cooking oil (not olive oil). Heat oil until very hot and then with a tablespoon, drop in large globs of the potato mixture.
- When the edges begin to turn a golden brown, then with a spatula, turn the latkes over and continue cooking until the other side is golden brown.

- Scrub potatoes; steam until almost tender. Plunge into cold water, then peel. Grate coarsely.
- Grate onion; add.
- Beat egg with salt, pepper, milk; add to potato-onion mixture.
- Combine lightly.

KITTENCAL'S CRISPY POTATO AND GREEN ONION PANCAKES (LATKES)
This recipe goes back 30 years or more, my family *loves* these! you can make these ahead of time and then freeze, just cool and place on a large baking sheet to freeze, when frozen stack in a freezer container or pop them into a freezer bag, to reheat and re-crisp, defrost the pancakes then place in a 400 degree oven for about 8 minutes turn over then continue baking until crisp, I strongly suggest to double the recipe these will be half gone before they even make it to the table! I like to add in some cayenne pepper and a bit of garlic powder but that is optional --- yield is only estimated you should get between 20-23 pancakes for this recipe, to make things easier use your processor to grate the potatoes, plan ahead the grated potatoes need to soak for a minimum of 8-24 hours or even up to 2 days to remove some of the starch, the longer soaking time the crispier they will be --- serve with sour cream :)

- Grate the potatoes using a the coarse side if the grater or use a food processor.
- Place into a large bowl and cover with cold water.
- Allow the grated potatoes to soak for at least a minimum of 8 hours or even up to 2 days.
- Using your hands firmly squeeze handfuls of the grated potatoes to remove as much liquid as possible, then place in a large mixing bowl.
- Add in egg, flour, seasoned salt and pepper; mix well with a wooden spoon, then add in the green onions and parsley (if using).

- The secret to these crisp delights, is to use bread crumbs instead of flour as other recipes suggest!
- Cut the washed,unpeeled potatoes into chunks.
- Peel the onion (medium)and cut into chunks as well.
- Mince the garlic.
- Put this in batches through the shredding disk of a food processor(not too fine). If you do not have a processor, use a blender but place one egg into the bottom first with each batch and pulse several times.
- Empty contents into a large bowl and drain off some of the liquid.
- Now stir in all the remaining ingredients except the oil. The batter should be thick enough to hold its shape. You may need to add extra bread crumbs.
- Pour enough oil into a large skillet to about 1/8 inch deep.
- Heat over medium high heat, about 350 degrees Fahrenheit.
- Drop in the batter by heaping tablespoons (I like them larger).
- Flatten them out a bit and cook until nice and brown on the underside, then flip and repeat. You may need to add more oil as you proceed. They should be crisp on the outside and soft but cooked on the inside. I always cook one and taste it. :-) Check if you want to add a little more salt.
- Have your oven heated to 200 degrees Fahrenheit; line several loaf pans with double paper towels.
- Stand the cooked pancakes in them on end and keep warm in the oven.
- You should get 20 to 30 depending on size. I allow at least 4 per person. :-) Enjoy!
PENNY'S LATKES (POTATO PANCAKES)
Penny's easy potato latke recipe is fantastic! The latkes fry to a perfect golden brown. They're crisp on the outside with a warm and soft center. - 1. Peel the potatoes and place them in a bowl full of ice water and 1 teaspoon cider vinegar.
- 2. Mince the onion. Put it into a fine sieve and using the back of a spoon or rubber spatula, press out as much onion juice as possible.
- 3. Grate the potatoes (I use a box grater) and return them to the ice water. Stir them up let sit 5 minutes. Pour off into a colander, let drain, and then place onto white towels. Roll up tightly and twist the towels to extract as much water as possible.
- 4. Beat the eggs well. Stir together the matzo meal or flour, salt and pepper in a large bowl. Add the grated potatoes and onion; mix well. Add the eggs and mix until all the potatoes are covered with egg.
- 5. Heat a large heavy skillet on medium heat for about 3 minutes, add about a quarter-inch of canola oil and continue heating until the oil is about 375 degrees. You can tell when the oil is hot enough by dropping a piece of potato into it. If it sizzles vigorously, it's ready.
- 6. Using a 2 tablespoon measure, drop a mound of potatoes into the hot oil and use the back of the measure to flatten to an even thickness. Fry until golden and the side up has lost its shiny, wet look. Turn and finish frying until done.
- 7. Remove from pan and drain on paper towel for a minute - serve as soon as possible.
- 8. Serve with applesauce and sour cream. Homemade applesauce is the best and it's easy to make. See my recipe.
LACY POTATO PANCAKES (LATKES)
Steps:
- 1. Grate potatoes either using the largest holes on a four-sided hand grater, or the grater attachment on a food processor.
- 2. Place potatoes in a colander and rinse under cold water to remove the starch and be sure to allow potatoes to drain well.
- 3. Grate onion, removing any excess moisture by placing in colander and pressing with the back of a wooden spoon.
- 4. Combine potato and onion.
- 5. Beat eggs into mixture; stir in flour, baking powder, salt and pepper.
- 6. If using a food processor, combine ingredients using plastic knife attachment so potatoes remain in grated pieces.
- 7. Heat 1/8\\\" of oil in a large skillet.
- 8. For each pancake, drop about 2 tablespoons of batter into the oil and flatten with the back of a wooden spoon; the flatter the pancake, the crisper it will be.
- 9. Brown well on both sides.
- 10. Drain well on paper towels.
- 11. Keep the cooked pancakes warm in a 100 degree oven.
- 12. Serve with pink cinnamon applesauce (see recipe) and/or sour cream.
- 13. Makes about 2 dozen regular size or 5 dozen miniatures.
- 14. Pancakes may be made ahead of time and refrigerated between layers of waxed paper when cooled.
- 15. To reheat, place in a single layer on an ungreased cookie sheet.
- 16. Bake uncovered at 450 for 5 minutes, or until crisp and hot.
POTATO LATKES (PANCAKES)
These are sauteed pancakes, and delicious. This is the way my grandmother made them, and they were served at the Jewish holidays of Hanukah and during the 8 days of Passover, but not at the Seder (dinner and religious service), but for a light supper. They are good served as a side dish with the Winter Vegetable Plate in my cookbook. If you don't have Matzo Meal (which is also great for breading meat or fish),substitute all purpose flour.

- Peel potatoes, apple, and onion.
- Put them through a meat grinder, if you have one. Alternatively, grate them in food prcessor or blender.
- Pour off some of the excess water from grated potatoes.

- Pour about 1" of oil in large skillet and heat until a few drops of water sizzle when they hit the oil.
