1/2 pound ground beef
2 tablespoons taco seasoning
1/3 cup water
1 small onion, finely chopped
1 to 2 Anaheim or Poblano chilies, roasted, peeled and finely chopped or 1 can (4 ounces) chopped green chilies
1 jalapeno pepper, seeded and finely chopped
1 garlic clove, minced
1 tablespoon canola oil
1/4 cup heavy whipping cream
1/8 teaspoon salt
4 flour tortillas (8 inches)
1 can (16 ounces) refried beans
1 cup shredded Monterey Jack cheese, divided
1 cup shredded cheddar cheese, divided
Sour cream and salsa, optional

Steps:

  • In a skillet over medium heat, cook beef until no longer pink; drain. Add taco seasoning and water. Simmer, uncovered, for 5 minutes; remove from the heat and set aside. , In a saucepan, saute onion, chilies, jalapeno and garlic in oil until tender, about 8 minutes. , Stir in cream and salt. Cover and simmer for 5 minutes. , Spread 3 tablespoons sauce in an ungreased 8-in. round or square baking dish. 1 medium onion, chopped
1 bottle (8 ounces) taco sauce
6 corn tortillas (6 inches), halved and cut into 1-inch strips
2 cups sour cream
1 cup shredded cheddar cheese
1 cup shredded part-skim mozzarella cheese

  • Crumble beef into a large microwave-safe dish. Stir in onion. Microwave, uncovered, on high for 6-7 minutes or until meat is no longer pink, stirring and draining every 2 minutes. This recipe is an inexpensive but filling side dish that was served at Lawry's California Center before closing its doors. It's from "Dear S.O.S. Thirty Years of Recipe Requests to the Los Angeles Times". It isn't low cal by any means, but every dieter needs a day off once in a while--and this is a splurge that is worth every bite! Heck, I'll run an extra mile for this!

1 1/4 cups chopped onions
1/3 cup oil
1 (28 ounce) can tomatoes
1 (1 1/2 ounce) package taco seasoning mix
2 tablespoons chile salsa
12 corn tortillas
1 lb monterey jack cheese, shredded
2 cups sour cream
1 teaspoon seasoning salt
seasoned pepper, to taste

Steps:

  • Saute 1/2 cup onion until tender.
  • Add tomatoes, seasoning mix, and chile salsa.
  • Simmer 15 to 20 minutes.
  • Set aside to cool.
  • Fry tortillas lightly in small amount of oil, just until soft.
  • Pour 1/2 cup sauce into bottom of 13x9-inch baking pan.
  • Arrange layer of 4 tortillas over sauce (tortillas can overlap).
  • Top with 1/3 of remaining sauce, 1/3 of remaining onions, and 1/3 of cheese.

1 (10.75 ounce) can condensed cream of chicken soup
1 (4 ounce) can chopped green chile peppers, drained
¼ cup milk
⅔ cup sour cream
8 (6 inch) flour tortillas
6 boneless chicken breast halves, cooked and cubed
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

1 (14.5 ounce) can diced tomatoes with green chile peppers, drained
½ cup water
1 cup sour cream
1 (1.25 ounce) package taco seasoning mix
8 ounces shredded Colby-Monterey Jack cheese
1 (18 ounce) package corn tortilla chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
