I use an electric skillet, but a large skillet will work great too. I have used tomato paste with 2 cups water to thin out to use as a sauce--it makes it more tangy.

2 tablespoons butter or 2 tablespoons margarine
1 -2 potato, sliced with skin on
1 (10 ounce) can corn, drained or 10 ounces corn, frozen thawed
1/2 cup green pepper, chopped
1 small onion, chopped
2 cups carrots, slices
1 lb lean ground beef
1 (8 ounce) can tomato sauce
1 1/2 teaspoons seasoning salt
2 tablespoons parsley flakes
1/2 teaspoon garlic powder
1 cup cheddar cheese, grated

Steps:

  • Melt butter in large skillet on low or 200° using an electric skillet.
  • Arrange potato slices in the bottom of the skillet to cover completely (you may need more potatoes).
  • In layers add the corn, green pepper, onion, carrots and beef in clumps (Yes, uncooked).
  • Combine tomato sauce, salt, parsley, and garlic powder. Pour over the meat layer.
  • Cover and cook on high or 325° on electric skillet until it starts to boil. Reduce heat to low 225° and cook 25 minutes longer.
  • Remove from heat, sprinkle cheese over top and put lid back on for 10 minutes to allow cheese to melt.

One 18-ounce box brownie mix
2/3 cup (1 1/3 sticks) melted butter
1/4 cup milk
2 large eggs
One 1-pound tube refrigerated chocolate chip cookie dough
20 chocolate sandwich cookies
1/2 cup caramel sauce
1 pint mint chocolate chip ice cream
1/2 cup chocolate sauce
Canned whipped cream, assorted sprinkles and maraschino cherries, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, combine the brownie mix, melted butter, milk and eggs until combined. Set aside.
  • Press the cookie dough into the bottom of a 10-inch cast-iron skillet. Lay the sandwich cookies in a single layer on top. Drizzle over the caramel sauce, getting into the spaces between the cookies. Pour over the brownie batter and smooth the top.
  • Bake until set, 40 to 45 minutes. Allow to cool for 20 minutes.
  • Top the brownie with scoops of the ice cream, then drizzle over the chocolate sauce and garnish with the whipped cream, sprinkles and cherries.
