LAZY HAM AND POTATO SOUP
I threw this together one morning when I needed to get rid of some leftover ham but didn't have any real cheese or potatoes. It was awesome - my husband and boys ate from it all day and into the night. They didn't even want me to cook dinner - they just kept eating this.

UNBELIEVABLY EASY POTATO SOUP
Don't let the sparse ingredient list fool you. This is a recipe that's so easy to make yet so delicious that everyone inhales it. My mother was raised on this soup and she served it often to us. My grown daughters now demand it when they are home. To this day, entering the house on a cold day and smelling this soup is the most comforting, delicious aroma imaginable. It's also non-fat if you use skim milk. (But I like half-and-half, myself!)

SKIN-ON POTATO SOUP
I like potato skins so I figured, why not make a potato soup that incorporates the yummy skins!! This is what I came up with during a cold and lazy Sunday afternoon. It stores well. I have not frozen it (I imagine it would work for OAMC), but I did refrigerate the leftovers and reheated it twice for lunch and it turned out great! It's also low-fat if you eliminate the bacon :)

EASY POTATO AND LEEK SOUP
A quick and easy soup that tastes great. I like to take a potato masher and roughly mash some of the potatoes. This helps to thicken the soup. I also like to use seasoned chicken broth. You can use heavy cream or half-and-half, depending on how rich you want the soup to be.

Tips for Making Lazy Potato Soup:
- Use a good quality potato. Russet potatoes are a good choice because they are starchy and will break down easily, creating a smooth and creamy soup.
- Don't overcook the potatoes. They should be tender but still hold their shape.
- Use a low-sodium chicken broth. This will help to control the saltiness of the soup.
- Add your favorite vegetables. Some good options include carrots, celery, onion, and garlic.
- Season the soup to taste. Add salt, pepper, and other spices as desired.
- Serve the soup hot with your favorite toppings. Some good options include cheese, sour cream, and chives.
Conclusion:
Lazy Potato Soup is a quick and easy soup that is perfect for a weeknight meal. It is also a great way to use up leftover potatoes. The soup is creamy and flavorful, and it can be customized to your liking by adding different vegetables or toppings. So next time you are looking for a quick and easy meal, give Lazy Potato Soup a try!
