Number Of Ingredients 12

1 seedless cucumber, sliced
1 large red capsicum, diced
1 green capsicum, diced
3 large tomatoes, diced
5 spring onions, chopped (scallions)
1/2 cup fresh parsley, chopped
1/4 cup lemon juice
1/4 cup olive oil

1/4 teaspoon pepper
1 large pita bread round

Steps:

  • Put diced and chopped vegetables into a bowl, cover and chill until shortly before serving time.
  • Combine lemon juice, oil, garlic, salt and pepper and pour over the vegetables.
  • Toast pita bread under the grill - it should be pale gold in colour, not brown.
  • Break into large pieces and toss into salad at last minute, so it will still be crisp when eaten.

Tips:

  • For the best flavor, use fresh, ripe vegetables.
  • If you don't have sumac, you can substitute lemon juice.
  • To make the bread croutons, you can use any type of bread you like. Just make sure it's stale so that it will crisp up in the oven.
  • If you're short on time, you can use a store-bought dressing. Just make sure it's a good quality dressing that you enjoy the taste of.
  • Fattoush is a great salad to serve as a main course or a side dish.

Conclusion:

Fattoush is a delicious and refreshing salad that is perfect for any occasion. It's easy to make and can be customized to your own taste. So next time you're looking for a healthy and flavorful salad, give fattoush a try. You won't be disappointed!
