LEFT OVER (LEFTOVER) FRIED RICE LATKES OR PANCAKES

Left over (Leftover) Fried Rice Latkes or Pancakes image

I had a lot of fried rice left over from a big Chinese feast I made and needed to change things up a little. I made these little pancakes and the family loved them. They are nice and crispy on the outside and soft on the inside. We dipped them in duck sauce but I'm sure dumpling sauce, mustard or any combination of your favorite would be great. They are yummy by themselves too. These could also be good hors'd' oeuvres as they are passable as finger food. My serving size may be off since I didn't really count how many I got and I made 2 + batches anyway. This easily doubles if you happen to have more left over. You can use 1 egg for 1-2 cups of rice. The point is just to get it to all stick together.

Time 20m

Yield 4 serving(s)

Number Of Ingredients 4

1 1/2 cups fried rice
1 egg, beaten
1 -3 tablespoon flour
vegetable oil (for frying)

Steps:

  • Mix together the egg and rice.
  • Add flour a tablespoon at a time and stir to combine. You want it to be sort of stiff so it will hold together. You may need more or less flour than called for.
  • Pour a little oil into a frying pan; about half way up the side of the pan. Heat on medium.
  • I used a small ice cream type scoop, a little over a tablespoon in size, too drop a little of the rice mixture into the hot oil. Press down a little with the back of the spoon to flatten. My rice had water chestnuts and baby corn in it, so I didn't flatten too much.
  • Fry until browned on one side then flip and fry the other side until brown.
  • Drain on a paper towel lined plate until ready to serve. You can keep them warm in the oven until they are all done.
  • Serve warm with your favorite sauce.

WILD RICE PANCAKES

Time 1h20m

Yield 6 servings

Number Of Ingredients 14

1 cup wild rice
3 cups all-purpose flour
1/4 cup sugar
2 tablespoons baking powder
1/2 teaspoon salt
3 1/2 cups whole milk, plus more if needed
1 tablespoon vanilla
2 large eggs
2 tablespoons salted butter, melted, plus more for the skillet and serving
6 chicken sausage links
Pancake syrup, warmed, for serving
Halved strawberries, for serving
Honeydew melon chunks, for serving
Blueberries, for serving

Steps:

  • Cook the wild rice according to the package instructions. (Do not add salt or cook it in broth; just cook in plain water.) Set aside.
  • Mix together the flour, sugar, baking powder and salt in a large bowl. Mix together the milk, vanilla and eggs in a separate bowl. Add the wet ingredients to the dry ingredients, stirring very gently until just combined. Add more milk if the batter seems too thick. It should definitely be thick but easily pourable. Add the melted butter to the batter, stirring gently to combine. Gently stir in the cooked wild rice. (Add half at first and see how you like the looks of the batter. Then slowly add in as much as you want.)
  • Heat a skillet over medium-low heat and add some butter. Pour large spoonfuls of the batter onto the skillet and cook until the pancakes are golden brown, 3 to 4 minutes per side. Repeat with the remaining batter.
  • Cook the sausage links according to the package instructions.
  • Serve the pancakes with an obscene amount of butter and warm syrup, along with some strawberries, melon chunks and blueberries.

RICE PANCAKES

Time 3m

Yield 8-12 pancakes

Number Of Ingredients 6

1 1/2 cups cooked white rice or 1 1/2 cups cooked brown rice, leftover
2 cups buttermilk or 2 cups yogurt
2 cups white flour or 2 cups whole wheat flour
1/2 teaspoon salt
2 medium eggs
1 teaspoon baking soda

Steps:

  • Measure 1 1/2 cups cooked cold rice into a big bowl. (You can use rice up to a week old, but any older than that is too old to eat.).
  • Use a fork or potato masher to mash the rice for a minute or two. This is a tiny bit of a nuisance, but it is what gives the pancakes their special texture. After the rice has been mashed a little, then add the rest of the ingredients. Use a whisk to stir everything up until it makes a light and creamy batter. If you want to use yogurt as your milk product, the batter may be very thick, depending on the thickness of your yogurt. Water may be added, to thin the batter. Use your best judgment if the batter seems very thick to you.
  • Fry these in a hot skillet or griddle, turning them whenever they are brown on the bottom. Use about 1/4 cup batter per pancake, to keep them small and manageable. They are so tender, that frying big ones is a little tricky, so keep them on the smallish side.

Tips:

  • Use day-old rice: Freshly cooked rice is too moist and sticky for pancakes, so it's best to use leftover rice that has had a chance to dry out slightly.
  • Add some vegetables: To make your pancakes more nutritious and flavorful, add some chopped vegetables such as carrots, onions, or bell peppers.
  • Use different seasonings: Experiment with different seasonings to find your favorite combination. Some popular options include garlic powder, onion powder, paprika, and chili powder.
  • Don't overmix the batter: Overmixing the batter will make the pancakes tough. Mix just until the ingredients are combined.
  • Cook over medium heat: Cooking the pancakes over medium heat will help them to cook evenly without burning.

Conclusion:

Leftover rice pancakes are a delicious and versatile way to use up leftover rice. They can be served for breakfast, lunch, or dinner, and they can be made with a variety of different ingredients. So next time you have some leftover rice, don't throw it away! Make some leftover rice pancakes instead.
