APRICOT - LEMON JAM

Apricot - Lemon Jam image

Very tangy, not too sweet! Heaven must taste like this. Got this from the NPR website, with a story about going to pick the apricots at the orchard every summer. http://www.npr.org/templates/story/story.php?storyId=12195825 Note: I pack the apricot halves firmly into the measuring cup so they are bursting full when I measure them. If you don't pack them in as firmly, you might want to use a few more apricots. Also, a note about the serving size: this assumes you are using a tablespoon or so as a serving to spread on a piece of bread. In my experience, this recipe makes just less than a pint of jam.

  • Stir it frequently enough that it doesn't stick to the bottom of the pot.
  • You can skim off the lighter colored stuff that rises to the top if you want, otherwise it seems to just disappear after a while.

Time P1DT8h30m

Yield 128

Number Of Ingredients 5

3 ½ pounds fresh apricots, pitted and finely chopped
7 cups white sugar
¼ cup fresh lemon juice
1 (1.75 ounce) package fruit pectin (such as Sure-Jell Premium Fruit Pectin®)
½ cup finely chopped fresh lemon balm

Steps:

  • Measure apricots after preparation; you should have 5 cups prepared fruit.
  • Combine apricots, sugar, and lemon juice in a large plastic or glass bowl; mix well. Cover and refrigerate 8 hours to overnight.
  • Inspect 7 to 9 half-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Transfer apricot mixture and all of the accumulated juice to a large saucepan. Stir in pectin and slowly bring to a full rolling boil that does not stop bubbling when stirred. Cook for 1 minute, stirring constantly. Skim off any foam with a ladle or a large spoon.
  • Remove from heat and stir in lemon balm leaves.
  • Ladle apricot jam immediately into the prepared jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and tightly screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Let rest for 24 hours without moving the jars. Gently press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

Tips:

  • Choosing the Right Apricots: Select ripe, juicy, and flavorful apricots. Look for ones that are plump, brightly colored, and free of blemishes.
  • Preparing the Apricots: Wash the apricots thoroughly and remove the pits. Cut them into small pieces or slices for easier blending.
  • Adjusting Sweetness: Taste the apricot puree before adding sugar or honey. If the apricots are already sweet, you may need less sweetener. You can also use a natural sweetener like agave syrup or maple syrup.
  • Creating a Smooth Puree: Use a high-powered blender or food processor to achieve a smooth and creamy puree. If you prefer a chunkier texture, you can pulse the mixture instead of blending it continuously.
  • Using Fresh Lemon Juice: Fresh lemon juice adds a bright and tangy flavor to the fruit pops. Avoid using bottled lemon juice as it may have a bitter taste.
  • Choosing Your Molds: You can use a variety of molds to create your fruit pops. Silicone molds are a popular choice as they are flexible and easy to remove the pops from. You can also use popsicle molds or ice cube trays.
  • Freezing and Storing: Freeze the fruit pops for at least 4 hours or overnight before serving. Store them in an airtight container in the freezer for up to 2 weeks.

Conclusion:

Lemon apricot fruit pops are a refreshing and healthy snack or dessert that are perfect for hot summer days. They are easy to make with just a few simple ingredients. By following the tips mentioned above, you can create delicious and flavorful fruit pops that everyone will enjoy. Experiment with different fruits and flavors to create your own unique combinations.
