BASIL LEMON BUTTER CREAM SAUCE

Basil Lemon Butter Cream Sauce image

This is a sauce recipe that was a frequent complement to chicken and fish during my study abroad residence experience with a french family in the Loire Valley region. Cream sauces are very popular paired with white and rosé wines in this geography, and this goes well over a thinly sliced breast of chicken, or a flaky whitefish. Although the sauce itself is somewhat fattening, if used conservatively it's actually a light and refreshing compliment to poultry and fish in the summer. If you absolutely feel the need to tone down the fat, be careful as you don't want the sauce to become too thin as it won't coat as nicely. Enjoy!

Tips:

  • Use fresh ingredients for the best flavor. If you don't have fresh basil, you can use dried basil, but use half the amount.
  • Sauté the shallots in butter until they are translucent before adding the white wine. This will help to develop their flavor.
  • Use a high-quality white wine for the sauce. A dry white wine, such as a Pinot Grigio or Sauvignon Blanc, will work well.
  • Bring the sauce to a simmer and cook it for a few minutes, or until it has thickened slightly. Do not boil the sauce, as this will cause it to curdle.
  • Stir in the heavy cream and lemon juice just before serving. This will help to prevent the sauce from curdling.
  • Serve the sauce over cooked fish, chicken, or vegetables.

Conclusion:

Lemon basil cream sauce is a delicious and versatile sauce that can be used with a variety of dishes. It is easy to make and can be tailored to your own taste preferences. With its bright, citrusy flavor and creamy texture, this sauce is sure to be a hit with your family and friends.
