1/4 cup butter, melted
2 eggs
1 tablespoon lemon zest

Number Of Ingredients 9

2 cups all purpose flour
1 ½ tsp baking powder
½ tsp salt
1 stick unsalted butter, room temperature
1 cup sugar
2 eggs
2 cups blueberries (12 oz)
2 tsp lemon zest
½ cup plain yogurt, regular or lowfat

Steps:

  • Preheat your oven to 350 degrees. Spray a loaf pan with nonstick cooking spray and set aside. In a medium sized bowl, whisk together your flour, baking powder and salt. Add the blueberries and lemon zest and toss to combine. Cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add the yogurt then the dry ingredients, mixing only until incorporated and being careful not to crush the blueberries. Scoop batter into your prepared loaf pan and bake for 1 hour 10 minutes, until golden brown. Let cool in the pan for 10 minutes before inverting gently onto a plate.

Tips:

  • Use fresh ingredients: Fresh blueberries and lemon zest will give your muffin bread the best flavor.
  • Don't overmix the batter: Overmixing can make the muffin bread tough.
  • Fill the muffin cups only 2/3 full: This will prevent the muffin bread from overflowing.
  • Bake the muffin bread until a toothpick inserted into the center comes out clean: This will ensure that the muffin bread is cooked through.
  • Let the muffin bread cool slightly before serving: This will help the muffin bread to hold its shape.

Conclusion:

Lemon blueberry muffin bread is a delicious and easy-to-make treat that is perfect for breakfast, brunch, or dessert. With its moist texture, sweet and tangy flavor, and fresh blueberries, this muffin bread is sure to be a hit with everyone who tries it. So next time you're looking for a tasty and satisfying baked good, give lemon blueberry muffin bread a try.
