Provided by lutzflcat

Categories     Parfait

Time 1h5m

Yield 4

Number Of Ingredients 8

1 ½ cups fresh blueberries
1 ½ tablespoons blueberry preserves
1 ½ cups heavy cream, chilled
½ teaspoon vanilla extract
2 tablespoons confectioners' sugar
1 cup lemon curd
12 fresh blueberries
4 mint leaves

Steps:

  • Combine blueberries and blueberry preserves in a small saucepan over medium heat. Bring to a boil and immediately reduce heat to simmer. Simmer until blueberries start to soften and pop, about 5 minutes. Set aside to cool for 15 to 20 minutes (sauce will slightly thicken).
  • Beat cream in a large chilled glass or metal bowl with an electric mixer until frothy. Add vanilla extract and sugar gradually, continuing to beat on low speed until soft peaks form. Slowly increase speed to high as cream starts to firm up. Beat until stiff peaks form, 1 to 2 minutes, scraping down the sides of the bowl one time during mixing.
  • Spoon equal layers of lemon curd, followed by blueberry sauce, and whipped cream in small dessert glasses. Repeat this layering one more time, and garnish with fresh blueberries and a sprig of mint.
  • Move glasses to the fridge, and chill for 30 minutes or longer.

LEMON BLUEBERRY OATMEAL MUFFINS

Lemon Blueberry Oatmeal Muffins image

Got this recipe from QuakerOatmeal.com. Turned out wonderful. I left out the lemon, but they still tasted great!

Provided by nickfo

Categories     Quick Breads

Time 39m

Yield 12 muffins, 12 serving(s)

Number Of Ingredients 12

1 3/4 cups Quaker Oats, divided (quick or old fashioned, uncooked)
2 tablespoons firmly packed brown sugar
1 cup all-purpose flour (add an additional 2 tablespoons if using old fashioned oats)
1/2 cup granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt (optional)
1 cup skim milk
2 egg whites, lightly beaten
2 tablespoons vegetable oil
1 teaspoon grated lemon peel
1 teaspoon vanilla
1 cup blueberries (If frozen, do not thaw)

Steps:

  • Heat oven to 400°F Line 12 medium muffin cups with paper baking cups. For topping, combine 1/4 cup oats and brown sugar; set aside.
  • For muffins, combine 1-1/2 cups oats with remaining dry ingredients in large bowl; mix well. In small bowl, combine milk, egg whites, oil, lemon peel and vanilla; mix well.
  • Add to dry ingredients; stir until moistened. Gently stir in berries. Fill muffin cups almost full; sprinkle with topping.
  • Bake 20 to 24 minutes or until light golden brown. Cool muffins in pan on wire rack for five minutes; remove from pan. Serve warm.

Tips:

  • Use fresh blueberries: Fresh blueberries will give your muffins the best flavor and texture. If you don't have fresh blueberries, you can use frozen blueberries, but thaw them before using.
  • Don't overmix the batter: Overmixing the batter will make your muffins tough. Mix just until the ingredients are combined.
  • Use a muffin scoop to fill the muffin tins: This will help you to get evenly sized muffins.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This will ensure that the muffins are cooked through.
  • Let the muffins cool for a few minutes before serving: This will help them to hold their shape.

Conclusion:

Lemon blueberry oat muffins are a delicious and easy-to-make breakfast treat. They're perfect for a quick grab-and-go breakfast or a snack. With their bright, citrusy flavor and plenty of juicy blueberries, these muffins are sure to be a hit with everyone.
