LEMON MARINADE (CHICKEN)
Another good recipe from local news chef, Chef Walter. A nice change from the usual lemon pepper marinade on store shelves. This recipe is enough for 2 pounds of boneless skinless chicken breasts. Prep time is marinade time. Note: feel free to cut back or eliminate the salt in this marinade. Low-sodium soy sauce also works well for this. (Thanks for the tip, Nif!)

LEMON GARLIC MARINADE FOR CHICKEN
I'm not sure where I got this recipe but it is very good. I usually throw some chicken breasts in a ziploc bag and add this marinade and then freeze. All I have to do for a quick meal is thaw and toss on the grill. This makes enough marinade for about 1-1.5 pounds of chicken breasts. Cooking time reflects marinating time.

Steps:
- To Marinate: Combine chicken and lemon juice in a large resealable plastic bag. Squeeze out air and seal bag. Refrigerate to marinate overnight, turning once.

Mix broth with reserved marinade and pour mixture over chicken. Top each breast with a lemon slice and sprinkle all with parsley.
- Bake in the preheated oven for about 20 to 30 minutes, or until cooked through (juices run clear) and tender.

Tips
- Use a good quality marinade. The marinade is what will give your lemon chicken its flavor, so make sure it's tasty and well-balanced. Use fresh lemon juice and zest, garlic, olive oil, herbs, and spices.
- Let the chicken marinate for at least 30 minutes. This will give the marinade time to penetrate the chicken and infuse it with flavor.
- Cook the chicken over medium heat. This will help to prevent the chicken from drying out.
- Serve the chicken with your favorite sides. Lemon chicken goes well with rice, pasta, vegetables, or salad.
