1 pound boneless skinless chicken breast, cut into 1/2-inch cubes
2 tablespoons plus 1 teaspoon lemon juice, divided
1 large onion, sliced
1 green onion, sliced
2 garlic cloves, minced
2 teaspoons olive oil
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
2 plum tomatoes, seeded and chopped
1/4 cup minced fresh cilantro
8 flour tortillas (8 inches), warmed
1 cup shredded lettuce
1/2 cup salsa

Steps:

  • Place chicken in a large resealable plastic bag; add 2 tablespoons lemon juice. Seal bag and turn to coat; refrigerate for 1-2 hours., In a large nonstick skillet, saute onions and garlic in oil until tender. Add the chicken, cumin, salt and pepper. 1/2 teaspoon sweet paprika
3 tablespoons olive oil
3 boneless, skinless chicken breasts, cut into 1/4-inch-thick strips
3 bell peppers (red, yellow or orange), stemmed, seeded and very thinly sliced
1 large white onion, halved and thinly sliced
Eight 6- to 8-inch flour tortillas, warmed if possible 1/4 cup chopped fresh cilantro leaves

⅛ cup red wine vinegar
½ lime, juiced

1 cup flour
1 ½ tablespoons butter
1 tablespoon olive oil
1 ¼ cups chicken stock
1 cup heavy cream
1 teaspoon salt

1 lemon, juiced
1 lemon, sliced
fresh parsley, for garnish

  • On a cutting board, cut the chicken breasts in half, widthwise.
