Creamy Lemon Dressing image

This tangy lemony dressing makes a creamy addition to salads or is great drizzled over grilled fish. Try it over a butter lettuce, grape tomatoes, and English cucumber salad. Try substituting plain Greek yogurt for the sour cream.

LEMON CREAM DRESSING (RAW VEGAN)

Lemon Cream Dressing (Raw Vegan) image

(LFRV) Oh I love this dressing!!! I've had it three nights in a row and I'm thinking about it right now. I pour this over baby greens, celery, cucumbers, and shredded red cabbage and I think its quite magical!! This recipe is for one serving so multiple as needed. You could easily add any herbs or spices you want but this is perfect for me!

Time 5m

Yield 1 serving(s)

Number Of Ingredients 4

1 dates, soaked (or not but chopped a bit)
1/2 lemon, juice
1 tablespoon tahini
2 tablespoons water (more or less depending how fluid you want it)

Steps:

  • I don't juice the lemon - instead I just slice it up minus the peel and throw it in a super small food processor (blender works as well), blend it all up, and pour over the salad!
  • Sometimes my date isn't even blended all the way in and it really doesn't matter - still delicious!

Tips:

  • For a richer flavor, use heavy cream instead of almond milk.
  • To make the dressing more tangy, add a tablespoon of lemon juice.
  • If you don't have maple syrup, you can use another sweetener, such as honey or agave nectar.
  • Add a pinch of salt and pepper to taste.
  • For a creamier dressing, blend the cashews until they are very smooth.
  • If you don't have a high-powered blender, you can soak the cashews in water for a few hours before blending.
  • This dressing is best served immediately, but it can be stored in the refrigerator for up to 3 days.

Conclusion:

Lemon cream dressing is a delicious and versatile dressing that can be used on a variety of salads, vegetables, and even fruits. It is easy to make and can be tailored to your own taste preferences. Whether you are looking for a light and refreshing dressing or a rich and creamy one, lemon cream dressing is sure to please.
