This is a wonderful lower-fat restaurant-quality dish that is easy to make, I also like to add in a few tablespoons of capers and cook with the lemon glaze if you are a lover of capers then add them in as it really adds to the flavour of this dish --- this lemon sauce is not a heavy creamy sauce which is what makes this dish lower in fat, it is more like a glaze that soaks into the chicken, and I would strongly suggest to double or even triple the glaze I most always do, and please be certain to use only dry breadcrumbs as fresh will not stick to the chicken as well --- this is *very* good!

4 boneless skinless chicken breasts (pounded to about 1/3-inch thickness)
2 tablespoons Dijon mustard
1 large egg (you may need two)
1 cup dry breadcrumbs
1/4 teaspoon poultry seasoning (or to taste)
1/2 teaspoon garlic powder
1/4-1/2 teaspoon seasoning salt
1 -2 tablespoon olive oil (for frying)
1/4 cup chicken broth
2 tablespoons fresh lemon juice
1/4 teaspoon salt (can use more to taste)
4 -5 thin lemon slices
fresh parsley, chopped (to taste)

Steps:

  • In a small bowl or shallow dish whisk together mustard and eggs; set aside.
  • Combine the dry bread crumbs with poultry seasoning, garlic powder and seasoning salt; spread on a piece of waxed paper.
  • Dip the breasts firstly in egg/mustard mixture (shake off any excess egg) then coat well with the crumb mixture, pressing downs with hands to adhear the crumbs to the breast.
  • Heat the olive oil in a skillet over medium heat.
  • Add in the chicken and cook for about 5 minutes on each side, or until it is no longer pink inside; remove and transfer to a plate to keep warm.
  • For the glaze; in the same skillet add in the broth, lemon juice and 1/4 teaspoon salt (or to taste, if using capers add in now) bring to a boil scraping any brown bits from the pan.
  • Add in lemon slices and parsley; mix to combine for about 1 minute.

1/3 cup desiccated coconut
1 cup self raising flour
1/2 cup coconut milk
1/2 cup caster sugar
1 tablespoon coconut milk powder
1 cup boiling water
1 lemon, juice of
1 tablespoon rum (optional)

Steps:

  • Preheat oven to 180'c, grease well an ovenproof dish.
  • Sift flour with a pinch of salt.
  • Cream butter and castor sugar until light and fluffy.
  • Beat in egg, rind, and coconut.
  • Add milk and flour alternatively.
  • Pour into the ovenproof dish.
  • SAUCE.
  • Combine sugar and milk powder, sprinkle over batter in dish. Pour over the boiling water, lemon juice and rum.

3/4 cup chicken broth mixed with 2-tsp flour
2 tablespoons lemon juice
1/2 teaspoon minced garlic
1/4 cup snipped fresh dill
1 tablespoon butter
5 ounces boneless chicken breasts
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon oil
2 tablespoons flour

Steps:

  • Mix together 2-tbsp flour, salt and pepper. Coat chicken with mixture.
  • Heat oil in large non-stick skillet. Add breasts and cook over medium-high heat until golden brown, turning once and cooked through.
  • Remove chicken to a plate.

150 g unsalted butter
2 teaspoons lemon rind (finely grated)
1/3 cup lemon juice
1 1/2 cups caster sugar
3/4 cup self-raising flour (sifted)
1 1/2 cups milk
4 eggs (separated)
6 teaspoons powdered sugar icing (to serve)

Steps:

  • Preheat oven to 180 C (fan forced 160 C).
  • Grease six 1 cup capcity ovenproof dishes.
  • Place butter, lemon rind, lemon juice, sugar, flour, milk and egg yolks in a bowl and whisk to combine.
  • Using an electric mixer, beat eggwhites on high speed until soft peaks form.
  • Using a metal spoon, fold in 1/4 if the eggwhite mix into the lemon mixture.
  • Gently fold in remaining eggwhite.
  • Spoon mixture into prepared dishes.
  • Place dishes in a large baking dish and pour boiling water into baking dish until halfway up the sides of the smaller dishes.
  • Bake for 25 to 30 minutes or until golden and set.
  • Dust with icing sugar mixture.

I found this recipe in The Frugal Gourmet Celebrates Christmas. He calls it "Nellie's Lemon Tart" and credits a friend of his from Toulouse, France for gifting him this recipe as his favorite. It sounds absolutely scrumtious to me - but then I love lemon desserts to cap off a meal!! I estimated on the prep times, which include chill times, some cooks may be faster than I am in the kitchen!!

3/4 cup butter, at room temperature
3 tablespoons confectioners' sugar
1 1/2 cups all-purpose flour
2 eggs, at room temperature
3/4 cup granulated sugar
2 lemons, juice and zest of, grated
3/4 cup butter, at room temperature
1 lemon
granulated sugar, to sprinkle

Steps:

  • To start the dough, cream together the butter and confectioners' sugar using a mixer.
  • Add the flour and mix until consistency becomes course/grainy.
  • Place dough in a ziplock bag and chill for 30 minutes.
  • Press and form dough into 10-inch tart pan covering bottom and sides.
  • Preheat oven to 425 degrees.
  • Bake for 10 minutes, then remove and cool.
  • Reduce oven heat to 350 degrees and hold to wait for tart.
  • Next, blend together the granulated sugar and the eggs.
  • Mix in the lemon juice, grated lemon peel, and butter, combine well.
  • Put tart pan on a cookie sheet for stability and pour the filling mix into the tart shell.
  • Using a potato peeler, peel the outer rind off another lemon so that only the white "pith" (thin layer) remains.
  • Make 8 thin slices from that lemon and place them carefully on the tart.
  • Place tart on tray in oven and bake for 35 minutes ( at 350 degrees).
  • Remove from oven and sprinkle granulated sugar on the lemon slices.
  • Increase oven to high broil and place tart back in oven on the top rack allowing to brown lightly on top.
  • **WATCH THIS CLOSELY as you can easily burn the crust or the tart.***.
  • Cool tart completely before serving.

The secret is not to overwork the mixture - use a light hand! If you have any left over - which is unlikely - it will keep for a couple of days in the refrigerator and can be warmed briefly in the microwave.

175 g white sugar (preferably caster sugar)
1/4 cup all-purpose flour
1 large fresh lemon rind, of finely grated
1/2 cup lemon juice
50 g butter, melted
3 eggs, separated
1 1/4 cups milk

Steps:

  • Set oven to 180°C (350°F) Put the flour, lemon rind and juice, melted butter, egg yolks and half of the measured sugar into a mixing bowl.
  • Beat until mixed.
  • Heat milk just until it reaches room temperature.
  • Add milk to egg mixture and beat briefly until combined.
  • With clean, dry beaters, whisk egg whites, gradually adding remaining sugar, until the mixture forms stiff peaks.
  • Lightly fold about 1 cup of the lemon mixture into the beaten egg whites, then add the egg white mixture to the rest of the lemon mixture.
  • Be very gentle with the mixture- a few lumps of white won't hurt.
  • Gentle handling at this stage will result in a feather-light sponge.
  • Empty the mixture gently into an ungreased, round, ovenproof dish (I use a 6 cup capacity pyrex casserole dish).
  • Place a baking tin in the oven.
  • Place the dish in the baking tin.
  • Now, using a jug or a kettle, add water to the baking tin so that it comes halfway up the sides of the dish.
  • Bake for about 40 minutes until the sponge top is light brown and well set.
  • Serve while still warm with cream or ice cream.
