2 tablespoons butter or 2 tablespoons margarine
2 tablespoons fresh lemon juice
2 tablespoons Dijon mustard
1/4-1/2 teaspoon dill weed
2 tablespoons slivered almonds, toasted

  • I usually steam the green beans for 5-7 minutes to get them a bit tender.
  • Melt butter or margarine in large frying pan.
  • Add green beans and cook on medium hight heat until coated with butter.

  • Check taste, add salt or pepper if desired.

2 tablespoons butter
Freshly squeezed lemon juice, to taste
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Snap off the stem ends of the green beans, or cut them off in a big bunch with a knife.
  • Heat a pan over a medium heat and add the butter. (It helps to use a pan with a light-colored bottom so you can keep track of the color.) Swirl the pan occasionally to be sure the butter is cooking evenly. As the butter melts, it will begin to foam. The color will progress from lemony-yellow to golden-tan to, finally, a toasty-brown.
  • Once you smell that nutty aroma, add the green beans and saute for 3 to 4 minutes. Add some lemon juice and salt and pepper, then transfer to a platter in batches with tongs.

1 Tbsp freshly squeezed lemon juice
½ Tbsp dijon mustard
¼ tsp sea salt
freshly ground black pepper to taste
1 tsp agave nectar
1 small clove garlic, grated (use kitchen rasp)
2 Tbsp olive oil
1 tsp fresh tarragon, chopped (or 1 tbsp fresh parsley or dill)

Steps:

  • In a pot of boiling, salted water, add beans. Let cook for 5-7 minutes (depending on thickness of beans), until just nicely tender to the bite. Remove, and immediately rinse beans through very cold water until they have completely cooled. Drain to dry and set aside.
  • Meanwhile, in a bowl, whish together lemon juice, mustard, salt, pepper, agave, and garlic. Continue to whisk and slowly drizzle in olive oil to emulsify. Finally, stir in tarragon.

  • Note: Dragon tongue beans are not always found in grocery stores, but may be found in specialty whole foods stores or at farmers' markets.
