1 large onion, halved and thinly sliced
1 tablespoon butter
4 cups water
1 tablespoon snipped fresh dill or 1 teaspoon dill weed
3/4 cup fat-free milk
2 medium lemons, thinly sliced
1/8 teaspoon pepper
2 pounds walleye, cod, halibut or orange roughy fillets

Steps:

  • In a large skillet, saute onion in butter until tender. Add water and dill; bring to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes. Add milk; stir in lemons and pepper. Top with fillets. Cover and simmer for 12-15 minutes or until fish flakes easily with a fork., Transfer fish to a serving platter and keep warm. Strain cooking liquid, reserving lemons, onion and dill; serve with fish.

I came up with this sauce to serve with Walleye Crab Cakes. I have been told by family and friends it is fabulous!!! I make it often. I have served it with several types of fish. It is a nice change from tartar sauce.

1/4 cup milk
1/2 tablespoon dried dill
1/2 tablespoon dried parsley
2 tablespoons lemon juice

  • Can serve immediately, or chill to let the flavors go through the sauce.

½ cup butter
dried dill weed to taste
lemon pepper to taste
3 tablespoons fresh lemon juice

Steps:

  • Place fish filets in a microwave-safe dish. Cut butter into pieces and place all over fish. Sprinkle with dill weed and lemon pepper. Drizzle fresh lemon juice all over the fish.
  • Cover and cook on high for 3 to 5 minutes or until the fish turns white.

Steps:

  • 4, 6-8 oz fresh or frozen boneless walleye fillets with skin. 4 individual or 2 medium maple, cherry, or cedar grilling planks. For at least one hour, which a weight, soak planks in water to cover them. Rinse fish and pat dry. Sprinkle fish with salt. In a bowl combine 3 tbsp lemon juice, 3 tbsp olive oil, 2 tbsp fresh dill or 1 tsp dried dill, 4 tsp garlic pepper seasoning, 1 tbsp brown sugar, 2 tsp lemon pepper sesoning, 1/2 tsp paprika. Brush only the flesh side with this mixture. Put planks on grill about 5 minutes until the start smoking and crackling. Then put each fillet on plank, skin side down. Put a small amount of mashed potatoes on plank and drizil with butter. Grill, covered, for 18-22 minutes or until fish flakes with fork. NOTE: for a gas grill use medium heat.

A great recipe for those fisherman (and their families) who love Walleye to eat, but are sick of the same old fried fish! This recipe is modified from the In-Fisheman magazine.

4 walleyed pike fillet
1/2 cup flour
salt and pepper
1/2 cup cornmeal
2 tablespoons unsalted butter
2 tablespoons olive oil
1 cup white wine
3/4 cup sour cream
4 tablespoons fresh dill, chopped (4 t. dried)
2 tablespoons fresh parsley, chopped
1 lemon, zest of

Steps:

  • In a large skillet, melt the olive oil and butter.
  • Rinse the fillets and pat dry. Combine the flour, salt and pepper, and corn meal, and dredge the fillets, shaking them lightly to remove excess flour.
  • Sauté the fillets over medium heat until golden. Turn fish and continue to cook until done. Remove and keep warm.
  • With a paper towel, wipe any crumbs or bits from the skillet and return to medium-high flame. Add wine and cook for 5-8 minutes, or until reduced by half.
  • Stir in the sour cream until smooth, remove from heat, and add herbs and lemon. Taste sauce and season with salt and pepper. Pour the sauce over fish and serve immediately.
