1-1/2 teaspoons olive oil
1 large onion, halved and sliced
1 tablespoon butter
1-1/4 cups reduced-sodium chicken broth
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1 bay leaf
1/2 cup heavy whipping cream
CROUTONS:
1 cup cubed sourdough bread, crusts removed
1 tablespoon olive oil
1/2 teaspoon minced fresh rosemary or 1/8 teaspoon dried rosemary, crushed
1/8 teaspoon salt
1/8 teaspoon pepper
TOPPINGS:
1/4 cup Gruyere cheese or shredded Swiss cheese
1 tablespoon minced fresh parsley

Steps:

  • In a small skillet, cook garlic in oil over low heat for 3-5 minutes or until golden brown. Remove from the heat; set aside., In a large saucepan over medium-high heat, cook onions in butter until softened. Reduce heat to medium-low; cook, stirring occasionally, for 30 minutes or until deep golden brown. Add the broth, thyme, bay leaf and reserved garlic. Bring to a boil. 2 tablespoons butter
3 shallots, chopped finely
2 large fennel bulbs, sliced thinly, save the feathery fennel tops to use as garnish
salt
black pepper, freshly ground
2 cups vegetable stock or 2 cups chicken stock
2 cups milk
2 slices fresh white bread, crusts removed
1 garlic clove, finely chopped
1 lemon, juice and zest of
1 tablespoon fresh parsley, chopped

Steps:

  • Melt half the butter in a saucepan and sauté the shallots until translucent.
  • Add the fennel.
  • Season with salt and pepper to your taste. Cover the pan and sweat the fennel for 10 minutes, until softened.
  • Add the stock and bring to a boil.
  • Simmer for 20 minutes.
  • Remove from heat and carefully puree the soup in a food processor or with a hand-held blender.
  • Return to the saucepan, and thin with milk to the desired consistency, I use about 1 1/2 cups, use more if you like it thinner. Heat through.

  • Remove the soup from the heat.

5 cups water
1 (8-inch) length of baguette, cut into 1-inch cubes

1 quart vegetable stock
2 cups canned tomatoes
1/2 teaspoon fennel seed
1 tablespoon extra virgin olive oil
1 large yellow onion, diced (about 2 cups)
salt
1 teaspoon anise seed, ground
4 garlic cloves, finely chopped
2 medium carrots, diced (about 1 cup)
2 medium fennel bulbs, quartered lengthwise, cored, thinly sliced (about 2 cups)
1/2 cup dry sherry
2 lbs fresh tomatoes, peeled, seeded, and pureed (about 3 cups or 1 28 oz. can tomatoes with juice, pureed)

1 -2 tablespoon extra virgin olive oil, as needed
