Yield Makes 4 (first course) servings

Number Of Ingredients 8

2 lemons
1/2 pound Haloumi cheese
1 large garlic clove
1/4 teaspoon salt
1/4 teaspoon sugar
1/4 cup plus 2 tablespoons olive oil
4 (3/4-inch-thick) slices peasant or country-style bread
2 tablespoons finely chopped fresh dill

Steps:

  • Prepare a gas grill for direct-heat cooking over moderately high heat.
  • Cut 8 thin slices from lemons, then squeeze enough juice from remainder to measure 2 tablespoons and put in a bowl.
  • Halve cheese diagonally, then cut each triangle, cut side down, into 1/3-inch-thick slices.
  • Mince garlic and mash to a paste with a pinch of salt using side of a large heavy knife, then add to lemon juice. Whisk in salt and sugar until dissolved, then add 1/4 cup oil, whisking until combined.
  • Separately toss lemon slices and cheese each with 1/2 tablespoon dressing.
  • Brush both sides of bread with remaining 2 tablespoons oil.
  • Grill bread, cheese, and lemon slices on grill rack, covered, turning over once (use a metal spatula to scrape under cheese to loosen before turning), until bread is toasted (2 to 3 minutes total), grill marks appear on cheese (3 to 4 minutes total), and lemons begin to wilt (4 to 6 minutes total).
  • Whisk dill into remaining dressing. Divide bread among 4 small plates and top with cheese and lemon slices. Drizzle with dressing and serve immediately.

Opened-Faced Omelet with Lemon-Dill Cream Cheese, Smoked Salmon and Grilled Asparagus image

Provided by Bobby Flay

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 11

8 ounces cream cheese, such as Philadelphia, at room temperature
1/4 cup finely chopped fresh dill
Finely grated zest of 1 lemon
Juice of 1/2 lemon
Kosher salt and freshly ground black pepper
12 thin spears fresh asparagus, trimmed
2 tablespoons canola oil, plus more to coat the pan
Kosher salt and freshly ground black pepper
12 large eggs
12 paper-thin slices nova smoked salmon
Fresh dill fronds, for garnish

Steps:

  • For the lemon-dill cream cheese: Mix together the cream cheese, dill and lemon zest and juice in a small bowl and season with salt and pepper. Cover and let sit at room temperature to allow the flavors to meld, at least 15 minutes.
  • For the omelets: Heat a grill pan over high heat. Brush the asparagus with 2 tablespoons oil and season with salt and pepper. Grill the asparagus on all sides until slightly charred and crisp-tender, about 5 minutes. Cut into thirds.
  • Heat a 6-inch nonstick pan over medium heat and brush with some oil. Whisk together 3 eggs in a small bowl until light and fluffy. Add to the pan and cook, stirring constantly with a heat-resistant rubber spatula, until barely cooked, about 20 seconds. Stir in some salt and pepper. Flip and cook until just set, but not dry, and barely golden brown on the bottom, 10 to 15 seconds more. Slide the omelet onto a plate. Spread some of the cream cheese over the omelet and top with some of the asparagus and 3 slices of the salmon. Garnish with some dill fronds. Transfer to a plate and repeat with the remaining ingredients.

LEMON GRILLED CHEESE

Provided by Giada De Laurentiis

Time 20m

Yield 4 sandwiches

Number Of Ingredients 6

1/2 lemon, sliced very thin with a sharp knife
1/2 teaspoon sugar
8 thin slices white bread
8 ounces fresh mozzarella, thinly sliced (see Cook's Note)
3 tablespoons unsalted butter
1/2 cup freshly grated Parmesan cheese

Steps:

  • Cut each slice of lemon into 6 wedges. Sprinkle with the sugar and set aside.
  • Lay out 4 slices of bread. Top each with 2 thin slices of mozzarella, then a few wedges of lemon, then one more piece of mozzarella. Top with the remaining slices of bread. Spread half of the butter on the top slices of bread and sprinkle each sandwich with 1 tablespoon of Parmesan cheese.
  • Heat a large skillet over medium heat. Place the sandwiches Parmesan-side down in the skillet. Spread the remaining butter on the bare slices of bread and sprinkle each one with 1 tablespoon of Parmesan cheese. Cover the skillet and cook until the bread and Parmesan are golden brown, about 2 minutes. Flip the sandwiches and cook until golden brown and the cheese inside is melted. Serve warm.

Tips:

  • Use a good quality bread that will stand up to the heat of the grill without getting soggy.
  • Use a light hand with the butter or oil when grilling the sandwich to prevent it from getting greasy.
  • Don't overcrowd the grill. Cook the sandwiches in batches if necessary.
  • Close the grill lid while cooking the sandwiches to help them cook evenly.
  • Use a spatula to carefully flip the sandwiches halfway through cooking to ensure they are cooked evenly on both sides.
  • If you are using a cheese that melts easily, like mozzarella, add it to the sandwich towards the end of cooking to prevent it from overcooking.
  • Serve the sandwiches immediately with your favorite sides.

Conclusion:

Lemon grilled cheese sandwiches are a delicious and easy-to-make summer meal. With just a few simple ingredients, you can create a sandwich that is both flavorful and satisfying. Whether you are grilling them for a backyard party or a quick weeknight dinner, lemon grilled cheese sandwiches are sure to be a hit.
