This is my mother's lemon meringue pie recipe and it is one of my all time favorite desserts. You can add a bit more lemon zest if you want it to be more tart! Don't let pie cool before putting on meringue.

1 (14 ounce) can sweetened condensed milk
3 eggs, separated
½ cup lemon juice
2 teaspoons lemon zest
¼ teaspoon cream of tartar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Press pie crust into a pie plate.
  • Mix sweetened condensed milk, egg yolks, lemon juice, and lemon zest together in a bowl; pour into pie crust.

An easy tasty pie. I got the recipe from a friend, I found it a bit too sweet for me, but maybe you could play about and lower the sugar if you wanted to. Please top the pie with the meringue while the filling is still warm and cook straight away, it seems to give the best results. I made my own rich shortcrust pastry with some lemon rind through it and it was lovely, but a pre-made one is just as good.

2 tablespoons plain flour
3 tablespoons cornflour
1/4 teaspoon salt
1 1/2 cups water
2 lemons, juice and zest of, unwaxed

1 (9 inch) pie crusts (bought or homemade)
4 egg whites
6 tablespoons caster sugar

Steps:

  • Preheat oven to 350°F, 175°C.
  • Filling: using a medium saucepan, whisk together cup of sugar, flour, cornflour and salt. Stir in zest and juice of lemon and the water. Cook over medium heat till just boiling. Stir in the butter. Beat yolks together well in a bowl big enough to add a cup of the hot mixture to. Add a cup of the sugar mix, whisking all the time then add this back to the saucepan. Bring to a boil, stirring all the time till thick. Remove from heat and pour into pie case.
  • Meringue: Using a large clean bowl ( wipe out with remains of lemon and dry with paper towel to make sure there is absolutely no grease/residue in the bowl), whisk the whites till foamy, can be done by hand but I find the electric mixer does the best meringue for this. Add sugar gradually, whisking till you have the stiff peak stage (or you can try holding the bowl upside down above your head to make sure!)Also check at this point that all the sugar has dissolved by rubbing a small amount of mix between your fingers. continue whisking for a few minutes if it still feels grainy. If its smooth, drop the mixture all over the warm pie filling making sure to go right up to the edges smoothing out the gaps as you go. I like to make sure there are peaks all over the meringue as I love the chewy bits too.
  • Bake in the preheated oven for 10 minutes, or till meringue is golden brown.
  • To enjoy at its best, let it cool down for a wee while before chilling for a few hours then serving with cream/ice cream. You will need to include the chilling time as I wasn't sure how to include that at the top.

3/4 cup plus 2 tablespoons/207 milliliters freshly squeezed lemon juice (from 4 to 6 regular or Meyer lemons)
2 teaspoons finely grated lemon zest (from 2 lemons)
Pinch of salt
6 tablespoons/85 grams unsalted butter, cut into 1/2-inch pieces

Katherine Mayfair's secret recipe that made Bree Van De Kamp furious, because "the girls" liked the new neighbor's pie better than Bree's! Bree tried to break into her house to steal the recipe but was unsuccessful. I don't see an exact duplicate on Zaar so maybe it is a secret....not anymore! I like that it's not too sweet, and use Boyajian Lemon Oil in place of the zest, which gives it a strong lemon flavor. Cook time includes chill time. Adapted from Wisteria Lane.

1 (9 inch) pie crusts, baked (Pillsbury is great, if you don't have time to make your own)
1 cup sugar
6 tablespoons cornstarch
1/4 teaspoon salt
2 cups milk
3 eggs, separated
3 tablespoons butter
1/3 cup fresh lemon juice (juice of approx. two lemons)
1 tablespoon grated lemon rind (or several drops lemon oil)
1/4 teaspoon cream of tartar
3 tablespoons sugar
1/2 teaspoon vanilla

Steps:

  • PIE FILLING: Combine the sugar, cornstarch and salt in the top of a double boiler.
  • Slowly add the milk, stirring constantly until the mixture thickens, about 10 minutes.
  • Cover the pan and allow to cook 10 minutes longer.
  • Stir occasionally.
  • Remove from heat.
  • Beat the egg yolks in a separate bowl and add about half a cup of the thickened milk.
  • Stir this mixture back into the double boiler.
  • Cook and stir over boiling water for 5-6 minutes.
  • Add the butter, lemon juice and rind; stir together until the butter melts, then remove from the heat.
  • Cool this custard, approximately 30 minutes, stirring gently every 10 minutes or so.
  • When cool, pour into the pie shell.
  • MERINGUE: Preheat the oven to 350 degrees.
  • Beat the egg whites with cream of tartar until they are stiff but not dry.
  • Beat in the sugar slowly, followed by the vanilla.
  • Heap onto the pie and spread with a rubber spatula across the entire crust, then "anchor" the meringue to the edge of the crust. As long as the meringue touches the crust, it won't pull away or shrink in the oven. Use a light back and forth motion of the spatula to make decorative waves in the meringue.
  • Bake for 10-15 minutes or until the meringue is delicately browned on top.
  • Cool pie at room temperature, approximately three hours. Serve and graciously say "sorry" when people ask for the recipe!
