LEMON PUDDING POUND CAKE

Lemon Pudding Pound Cake image

I love my Aunt TC's Lemon-Lime Soda Cake, so I thought it would be fun to make my own pound cake to share with her. Instant lemon pudding mix is the key to making this pound cake extra moist, and the lemon drizzle on top adds another layer of citrusy goodness.

Yield 4

1 tsp lemon rind
3/4 cups milk
2 egg whites stiffly beaten

Steps:

  • mix in order given then add egg whites , pour into custard cups and bake about 30 minutes in 375 degree oven until slightly browned on top. Place cups in pan of water as for custard.

Tips:

  • Zest the lemons before juicing them: The zest of the lemon contains a lot of flavor, so it's important to zest the lemons before juicing them. This will help to release the essential oils and give the pudding a more intense lemon flavor.
  • Don't overcook the pudding: The pudding is done when it has thickened and coats the back of a spoon. Overcooking the pudding will make it tough and rubbery.
  • Chill the pudding before serving: Chilling the pudding allows it to set and develop its full flavor. You can chill the pudding for at least 2 hours, or overnight.
  • Serve the pudding with your favorite toppings: Lemon Mystery Pudding is delicious on its own, but it can also be served with a variety of toppings, such as whipped cream, ice cream, or fresh berries.
