Lemon ricotta pasta is a light and refreshing dish that is perfect for a summer meal. The combination of tangy lemon, creamy ricotta, and fresh herbs creates a flavor that is both complex and satisfying. This dish is also relatively easy to make, making it a great option for busy weeknights. For the best results, be sure to use fresh lemon zest and juice, and high-quality ricotta cheese. You can also add other ingredients to your pasta, such as grilled chicken, shrimp, or vegetables, to create a more substantial meal.

ONE-POT PASTA WITH RICOTTA AND LEMON
This elegant, bright pasta dish comes together in about the same amount of time it takes to boil noodles and heat up a jar of store-bought marinara. The no-cook sauce is a 50-50 mix of ricotta and Parmesan, with the zest and juice of one lemon thrown in. That's it. To make it more filling, add peas, asparagus or spinach in the last few minutes of the pasta boiling, or stir in fresh arugula or watercress with the sauce in Step 3. It's a weeknight and for-company keeper any way you stir it.

Tips:
- Use fresh ingredients whenever possible, especially for the lemon juice and zest. Fresh herbs, such as basil or oregano, can also add a nice flavor.
- Don't overcook the pasta. It should be cooked al dente, or slightly firm to the bite.
- Save some of the pasta cooking water before draining. You can use it to thin out the sauce if it becomes too thick.
- Add the ricotta cheese to the pasta while it is still hot. This will help it melt and create a creamy sauce.
- Season the pasta to taste with salt and pepper. You can also add a pinch of red pepper flakes for a little spice.
- Garnish the pasta with fresh herbs, such as basil or oregano, before serving.
Conclusion:
Lemon ricotta pasta is a simple but delicious dish that is perfect for a weeknight meal. It is light and refreshing, yet still satisfying. With a few simple ingredients and a little bit of time, you can create a meal that your family and friends will love.
