TRIPLE D'S LEMONADE PORK CHOPS
Inspired from a Diner's, Drive-In's & Dives episode. I "THINK" I have all the ingredients right...I just scaled it down. Since I LOVE Lemon Pepper Chicken, this might be good for chicken, too!!!

Steps:
- In a food processor, combine the lemons (rind & seeds too -- EVERYTHING), sugar and 1 cup water -- process until liquified.
- Strain the mixture.
- Place the lemon mixture & remaining ingredients, (except the chops & the flour) in a large stainless steel saucepan.
- Simmer for 1 hour on medium, stirring often, being careful not to burn.
- Remove from heat & set aside to cool.
- Preheat oven to 325°.
- Dredge chops in the seasoned flour.
- Brown chops in olive oil over med.-high heat until golden brown -- cook in batches, if need be.
- Place chops in roaster & pour lemonade sauce over.
- Cover roaster & place in oven.
- Cook for 1½ hours or until tender.
LEMONADE PORK CHOPS
I saw this on Diners, Drive-Ins and Dives. I put the recipe together by watching the video on their website several times and guesstimating the amounts. You can make any adjustments you feel like to suit your own taste as the simmering progresses. As a bonus, this is about the best lemonade I have ever tasted due to the fact that you get all the oil from the skins included and there is no heat used that could alter the flavour.

Steps:
- In batches in food processor combine Lemons, sugar and just enough water to make a slurry. In a large container combine the slurry with the rest of the water. Strain the mixture and you should end up with 8 cups of the best lemonade you ever tasted.
- Combine all other ingredients and the lemonade. Simmer for 2 hours and use immediately or set aside in fridge for later use.
- This amount covers 18 large Pork Chops in a full sized roasting pan, so adjust amounts according to requirements.
- When I made the Pork Chops, this did 18 large (Costco) bone in double loin chops. I just tossed them in bread crumbs and quickly browned them in a skillet. Then they are stacked overlapping in a deep roasting pan and covered with the sauce. Cover the roaster with plastic wrap and then aluminum foil. Place in a preheated oven at 350F and cook for 2 hours or until the chops are easy to pull apart. At the 1 hour mark, rearrange the chops so the top ones spend some time completely covered in sauce.
