1 cup fresh lemon juice
1/4 cup dried mint
1 medium head of cabbage (about 1 1/2 lb.), halved, very thinly sliced
2 tsp. kosher salt, plus more
1/4 cup extra-virgin olive oil, plus more

Steps:

  • Combine lemon juice and mint in a large bowl. Add cabbage and 2 tsp. salt.
  • Toss cabbage with your hands for a few minutes, squeezing to help soften (the lemon juice and salt will continue to tenderize it as it sits). Add 1/4 cup oil and toss again to coat. Cover and chill at least 2 hours and up to 12 hours.
  • To serve, taste and season with more salt and drizzle with oil.

Steps:

  • To make simple syrup: Place 2 cups sugar and 2 cups water in a saucepan and bring to a boil. Stir until sugar is dissolved and let cool. Place lemon juice in a large pitcher, add remaining 4 cups water and 1 cup of the simple syrup or more to taste. Stir in mint leaves and refrigerate for 1 hour. Serve over ice.

2 ½ cups cold water, divided
1 cup white sugar
¼ cup fresh mint leaves
1 lemon, zested, or more to taste
1 cup fresh lemon juice
½ cup limoncello liqueur

Steps:

  • Combine 1 cup water, sugar, and fresh mint leaves in a saucepan over medium heat. Bring to a light boil, stirring occasionally, until sugar is dissolved, about 5 minutes. Remove from heat; stir in lemon zest. Let syrup cool slightly, about 10 minutes.
