Time 1h20m

Yield 2 loaves, 16 serving(s)

Number Of Ingredients 14

4 cups flour
1 1/2 cups sugar
1 (3 1/2 ounce) package instant lemon pudding mix
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
4 eggs
1 1/4 cups milk
1 cup vegetable oil
3 tablespoons lemon juice
1 teaspoon lemon extract
2 cups zucchini, shredded
1/4 cup poppy seed
2 teaspoons lemon peel, grated

Steps:

  • In large bowl, combine the flour, sugar, pudding mix, baking soda, baking powder and salt.
  • In another bowl, whisk the eggs, milk, oil, lemon juice and extract.
  • Stir into dry ingredients just until moistened.
  • Fold in the zucchini, poppy seeds and lemon peel.
  • Pour into 2 greased 9-inch by 5-inch by 3-inch loaf pans.
  • Bake at 350 degrees for 50-55 minutes or until a toothpick inserted near the center comes out clean.
  • Cool for 10 minutes before removing from pans to wire racks to cool completely.

Tips:

  • Use fresh, ripe zucchini. This will ensure the best flavor and texture in your bread.
  • Grate the zucchini finely. This will help it distribute evenly throughout the batter and prevent it from becoming too watery.
  • Don't overmix the batter. Overmixing can make the bread tough.
  • Use a loaf pan that is no larger than 9x5 inches. A larger pan will make the bread too thin and dry.
  • Bake the bread until a toothpick inserted into the center comes out clean. This will ensure that the bread is cooked through.
  • Let the bread cool completely before slicing and serving. This will help it hold its shape and prevent it from crumbling.

Conclusion:

Lemony zucchini bread is a delicious and easy-to-make treat that is perfect for any occasion. It is moist, flavorful, and has a hint of lemon zest that brightens up the flavor. Whether you are looking for a quick snack or a special dessert, this bread is sure to please everyone.
