LENTIL SWEET POTATO COCONUT CURRY
This is my own recipe combining several of my favourite ingredients. This can be altered in a variety of ways, including adding different vegetables such as cauliflower or white potato, adding grilled chicken, paneer or a tin or two of chickpeas. This makes a substantial batch, which I usually portion out and freeze.

Tips:
- Choose the right lentils: For this recipe, it's best to use red lentils, as they cook quickly and break down easily, creating a smooth and creamy sauce.
- Don't overcook the lentils: Lentils should be cooked until they are tender but still hold their shape. Overcooking can make them mushy.
- Use fresh vegetables: Fresh vegetables will give your curry the best flavor. If you don't have fresh vegetables on hand, you can use frozen vegetables, but be sure to thaw them before adding them to the curry.
- Add some spice: If you like spicy food, add a pinch of chili powder or cayenne pepper to the curry. You can also add some garam masala or curry powder for a more authentic flavor.
- Serve with rice or naan: Lentil sweet potato curry is traditionally served with rice or naan. You can also serve it with quinoa or your favorite whole grain.
