1 green bell pepper, chopped
½ large white onion, chopped
2 stalks celery with leaves, chopped
1 small head broccoli, chopped
¼ (16 ounce) package frozen corn kernels
2 skinless, boneless chicken breast halves - cubed
1 clove garlic, minced
5 leaves fresh basil
2 sprigs fresh oregano
1 pinch dried rosemary
1 pinch dried parsley
salt and pepper to taste
4 cubes chicken bouillon, crumbled

Steps:

  • In a large pot, combine bell pepper, onion, celery (reserve leaves for garnish), broccoli, corn, chicken and garlic. Season with basil, oregano, rosemary, parsley, salt and pepper. Stir bouillon into mixture and pour in enough water to cover by 2 inches. Bring to a boil, then reduce heat and simmer 2 hours, stirring occasionally.

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup milk
1 envelope garlic and herb pasta sauce mix

Hot cooked fettuccine

Steps:

1 (3 lb) chicken, cut up
4 cups chicken stock
1 bay leaf
1 onion
1 stalk celery
1 carrot
1/2 cup butter
1/2 cup flour
2 cups milk
2 cups cream
1/4 teaspoon thyme
1/4 teaspoon marjoram
1/4 teaspoon chives
1/8 teaspoon nutmeg
1/2 teaspoon turmeric or 1/2 teaspoon saffron
3/4 cup cooked rice
salt and pepper
chopped parsley

Steps:

  • Cook chicken in broth with onions, celery and carrots.
  • approx 1 1/2 hours.
  • remove skin and bones, chop chicken, skim fat.
  • Return chicken to the pot, add herbs and rice.
  • In a seperate pot, melt butter, add flour, whisk for 1 min, slowly add your cream and milk and whisk over low heat till thickened.
  • Add to the pot with the chicken, rice and broth, stirring till smooth and thick.
  • Heat through.

1 broiler/fryer chicken (3 to 3-1/2 pounds), cut up
2-1/2 quarts water
4 medium carrots, cut into 1/2-inch pieces
1 medium onion, chopped
1/2 cup chopped celery
5 chicken bouillon cubes
2 tablespoons dried parsley flakes
1 tablespoon dried thyme
1 teaspoon each rubbed sage and poultry seasoning
1 teaspoon salt, optional
1/2 teaspoon pepper
1 large bay leaf
1 package (12 ounces) frozen noodles or 2 cups cooked noodles

Steps:

  • In a Dutch oven or soup kettle, place the first 13 ingredients. Cover and bring to a boil; skim fat. Reduce heat; cover and simmer for 1-1/2 hours or until chicken is tender., Remove chicken; allow to cool. Debone and cut into chunks. Skim fat from broth; bring to a boil. Return chicken to kettle.
