This just came in an email from Sparkrecipes.com, and I am intrigued enough that I am posting for safekeeping. Sounds like a cool and delicious treat for the upcoming hot summer months! The recipe didn't come with a chill time, so I am taking a guess here. I am also guessing as to the size of the box of pudding; that was not listed, either. Please let me know what size you use if you try this! I imagine this might also be delicious frozen!

Tips:

  • Use high-quality chocolate for the filling. This will make a big difference in the flavor of the pie.
  • Don't overcook the pie crust. It should be golden brown, but not too dark.
  • Let the pie cool completely before serving. This will help the filling to set and the pie to hold its shape.
  • Serve the pie with a dollop of whipped cream or a scoop of vanilla ice cream.
  • If you don't have a pie plate, you can use a 9-inch springform pan.
  • If you want a gluten-free pie crust, you can use a gluten-free flour blend or a mixture of almond flour and oat flour.
  • You can also use a chocolate cookie crust instead of a graham cracker crust.
  • If you want a richer filling, you can add a tablespoon or two of Irish cream liqueur.
  • If you don't have a kitchen torch, you can use a regular lighter to toast the top of the meringue.

Conclusion:

Leprechaun pie is a delicious and festive dessert that is perfect for St. Patrick's Day. It is easy to make and can be enjoyed by people of all ages. You can also use it to impress your friends and family. So, next time you are looking for a special dessert, give leprechaun pie a try!
