LETTUCE SOUP

An easy Lettuce Soup recipe. This soup is a great way to use lettuce's outer leaves and ribs, which usually go to waste. Any kind of potato and any salad greens, including lettuce, arugula, spinach, and watercress, will work fine.

PEA AND LETTUCE SOUP

Pea and Lettuce Soup image

This is a french recipe my mum copied from a library cook book. I make it a bit differently to the original recipe and have included the changes that I have made in brackets. Please let me know if it is confusing. Everone (so far!) loves my adaptation, it has a great flavour and is just so smooth and creamy. We usually eat this with baked vegetables and buttered green beans mixed with chopped fresh tomato. I hope you like this as much as we all do! Cooking time is only approximate as I haven't taken note of this and is for my adapted version.

CHILLED PEA, LETTUCE AND HERB SOUP

Chilled Pea, Lettuce and Herb Soup image

This elegant soup is sweet and heavenly. The texture is silky and the consistency thick -- but only because there are lots of peas in it. I used water rather than stock when I tested this recipe, and it worked just fine.

CREAM OF LETTUCE SOUP

Cream Of Lettuce Soup image

This is such a delicious soup! It has a lovely consistency and loved by all who I have served it to. This is a real winner! People who have never had it before can't seem to guess whats in it!! Where this recipe calls for Chicken Stock, I use Campbell's Real Stock, and add water. It's so much easier than having to make your own! I usually use 1/2 Chicken and 1/2 Vegetable Stock. If making in advance leave out the beaten egg yolks and scalded cream and add just before re-heating and serving. For the purpose of freezing -leave the beaten egg yolks and scalded cream out until thawed and re-heated.

LETTUCE AND POTATO SOUP

Lettuce and Potato Soup image

This is what the French do with the outer leaves of lettuce that are too tough for a salad. The soup is good hot or cold.

Provided by Martha Rose Shulman

Time 1h15m

Yield Serves 4 to 6

Number Of Ingredients 11

1 tablespoon extra virgin olive oil
1 medium onion, chopped
1 leek, white and light green parts only, sliced and rinsed well
2 garlic cloves, minced
1 1/4 to 1 1/2 pounds (2 large) russet or Yukon gold potatoes, peeled and diced
6 cups chicken stock, vegetable stock, or water
A bouquet garni made with a cleaned leek green, a bay leaf and a few sprigs each parsley and thyme, tied together
Salt to taste
5 ounces lettuce leaves, washed and coarsely chopped (4 cups)
Freshly ground pepper
2 tablespoons chopped flat-leaf parsley or chives for garnish

Steps:

  • Heat the olive oil in a large, heavy soup pot over medium heat and add the onion and leek. Cook, stirring, until tender, about 5 minutes. Add 1/2 teaspoon salt and the garlic and cook, stirring, until the garlic is fragrant, about 1 minute. Add the potatoes, stock or water, and bouquet garni, and bring to a simmer. Add salt to taste, cover and simmer over low heat for 45 minutes.
  • Stir in the lettuce leaves and continue to simmer for another 15 minutes. The potatoes should be thoroughly tender and falling apart.
  • Using an immersion blender, or in a blender or food processor fitted with the steel blade (working in batches and covering the blender lid or food processor with a kitchen towel to prevent the hot soup from splashing), blend the soup until smooth. If you want a smoother, silkier texture, strain the soup through a medium strainer, pushing it through the strainer with a pestle, spatula, or the bowl of a ladle. Return the soup to the heat, add lots of freshly ground pepper, taste and adjust salt. , Heat through and serve, garnishing each bowl with chopped fresh parsley or chives.

CHILLED SUMMER LETTUCE, LOVAGE AND GARDEN PEA SOUP

Chilled Summer Lettuce, Lovage and Garden Pea Soup image

A delightful and refreshing chilled soup for summer - this savoury soup takes its flavour from freshly chopped lovage leaves, which impart a savoury, lemony and celery-like taste. I like to serve this pale green soup in clear glass bowls for maximum impact, with a few chopped leaves sprinkled on top and a swirl of cream. This soup makes an elegant starter for any summer event or a light luncheon dish. Do not be tempted to add more lovage then is suggested, it is a very strong flavoured herb and can be overpowering if used with a heavy hand!

Tips:

  • Use fresh ingredients: The fresher your ingredients, the tastier your soup will be. Look for crisp lettuce with no signs of wilting or browning.
  • Choose the right type of lettuce: Not all lettuces are created equal. Some varieties, such as romaine and iceberg, are better suited for soups than others. Romaine lettuce holds its shape well and has a slightly bitter flavor that pairs well with other ingredients. Iceberg lettuce is milder in flavor and has a more delicate texture.
  • Don't overcook the lettuce: Lettuce cooks quickly, so it's important not to overcook it. Otherwise, it will become limp and lose its flavor. Add the lettuce to the soup towards the end of the cooking time and cook it just until it is wilted.
  • Season to taste: Lettuce soup is a versatile dish that can be seasoned to your liking. Add salt, pepper, and other herbs and spices to taste. You can also add a squeeze of lemon juice or a dollop of sour cream to brighten up the flavors.
  • Serve immediately: Lettuce soup is best served immediately after it is made. The lettuce will continue to wilt and lose its flavor if it is stored for too long.

Conclusion:

Lettuce soup is a delicious and easy-to-make dish that can be enjoyed for lunch or dinner. It is a great way to use up leftover lettuce and other vegetables. Lettuce soup is also a good source of vitamins and minerals, making it a healthy choice for people of all ages. So next time you're looking for a quick and easy meal, give lettuce soup a try.
