LICKITY SPLIT FRIED RICE

Another heirloom Cookgirl recipe circa 1973. A few years I subbed tempeh bacon and splash of hickory smoke for real bacon and it was really good! Use your favorite bacon or ham substitute.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 8

2 -3 slices bacon, crisply cooked
4 cups leftover cooked rice, approximately
soy sauce, to taste
black pepper, to taste
1 garlic clove, finely minced (although in '73 it would have been garlic powder)
1/2 cup frozen mixed vegetables (carrots, peas, green beans, corn)
2 green onions, sliced thinly
1 egg, lightly fried, then chopped up

Steps:

  • In a large skillet or wok fry the bacon on medium heat until crispy.
  • Set aside to cool and drain then cut up into little pieces. Save the bacon drippings.
  • Increase heat to medium-high. Add the cooked rice to the pan and break up any lumps with a fork.
  • Fry until the rice is browned, adding soy sauce and black pepper, to taste.
  • Stir in the garlic and mixed vegetables. Reduce heat to medium and fry rice until the vegetables are brightly colored and heated through.
  • Stir in the green onions and fry another minute.
  • Remove from heat and add the crumbled bacon and chopped egg.

TURMERIC FRIED RICE

Turmeric Fried Rice image

This is a fairly easy recipe for fried rice, yet it tastes really good. Good recipe to impress your loved ones. This is my favorite recipe for fried rice, especially when I am in a hurry, and not really in an 'all-day-in-the-kitchen' cooking mood:) Note: This is not a chinese fried rice which is usually more moist and can be eaten by itself. This is more of an Indian, or Sri lankan fried rice that is usually dry and is eaten with curries. I thought I should explain since some of you might be expecting more of a 'chinese' kind of a fried rice :)

Time 40m

Yield 4 serving of rice, 4 serving(s)

Number Of Ingredients 9

2 cups basmati rice
3 tablespoons canola oil
1/2 medium carrot, grated
1/2 medium onion, thinly sliced
2 cloves garlic, thinly sliced
1/2 teaspoon turmeric (just for the coloring)
1 egg
1 teaspoon chili powder
2 teaspoons salt

Steps:

  • In a medium pot, fry the onions and the garlic in the oil till golden brown.
  • Add the grated carrot and fry for about 3 minutes.
  • Add the chilli powder, turmeric, salt, and egg and stir for another minute.
  • Stir in the rice.
  • Stir the mixture 2-3 minutes until the rice is properly mixed with the rest of the ingredients.
  • Pour 3 cups of water and stir well.
  • Let it cook uncovered until the water boils.
  • Lower the heat and cover the pot.
  • Let it cook till all the water dissapears from the bottom of pan.
  • (till you think the rice is cooked, usually it takes about 15 minutes).
  • Serve hot with your favorite curry or as a side dish.

Tips:

  • Use day-old rice: This will help the rice grains stay separate and not become mushy.
  • Cook the rice properly: The rice should be cooked until it is tender but still has a slight bite to it.
  • Use a wok or large skillet: This will help the rice cook evenly and prevent it from sticking.
  • Heat the wok or skillet over high heat: This will help create a nice sear on the rice and vegetables.
  • Add the ingredients in order: This will help prevent the rice from becoming overcooked.
  • Stir-fry the rice constantly: This will help prevent it from sticking to the wok or skillet.
  • Use a variety of vegetables: This will add flavor and color to the fried rice.
  • Use a flavorful sauce: This will help bring all the ingredients together and make the fried rice more delicious.
  • Serve the fried rice immediately: This is when it is at its best.

Conclusion:

Fried rice is a delicious and versatile dish that can be made with a variety of ingredients. It is a great way to use up leftover rice and vegetables. With a little practice, you can make fried rice that is restaurant-quality. So next time you are looking for a quick and easy meal, give fried rice a try. You won't be disappointed!
