3 1/2 cups flour
2 teaspoons active dry yeast
1 1/4 cups milk
1/4 cup sugar
1/4 cup shortening
1 teaspoon salt
1 egg
2 tablespoons butter, melted

Steps:

  • Add all ingredients EXCEPT melted butter to bread machine in order as directed by manufacturer.
  • Set for dough cycle.
  • Check dough after a few minutes and if needed add a little more milk or water to make a smooth dough.
  • When dough cycle is complete, remove dough, punch down and let rest for ten minutes.
  • Lightly grease 13 x 9 glass baking dish.
  • Divide dough into 18 pieces and place in pan.

2 (.25 ounce) packages active dry yeast
1 ¾ cups warm water (110 degrees F/45 degrees C)
½ cup white sugar
1 teaspoon salt
¼ cup butter, melted and cooled
1 egg, beaten
2 ¼ cups whole wheat flour
2 ½ cups all-purpose flour
¼ cup butter, melted

Steps:

  • In a large bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • Mix sugar, salt, 1/4 cup melted butter, egg, and whole wheat flour into yeast mixture. Stir in all-purpose flour, 1/2 cup at a time, until dough pulls away from the sides of the bowl. Turn dough out onto a well floured surface, and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place dough in bowl, and turn to coat. Cover with a damp cloth, and let rise in a warm place until doubled in volume, about 1 hour.
  • Punch down dough, cover, and let rise in warm place until doubled again, about 30 minutes.

Roll strips up into spirals, and place into muffin cups. Brush tops with melted butter. Let rise uncovered in a warm place 40 minutes, or until doubled in bulk.
  • Preheat oven to 400 degrees F (200 degrees C). Bake for 12 to 15 minutes, or until golden brown. Remove from oven, and brush again with melted butter.

1 teaspoon parisienne essence
2 tablespoons butter
1 1/2 teaspoons salt
2 teaspoons molasses or 2 teaspoons golden syrup
2 cups bread flour
1 cup whole wheat flour
1 cup rye flour
1/4 cup cocoa
1 (1/4 ounce) packet active dry yeast

Steps:

  • Put all ingredients in bread maker in that order (unless your bread maker has a special requirement).
  • Put on dough cycle.
  • After dough cycle is complete, turn out onto a lightly floured surface.
  • Roll into a log.
  • Cut log into 6 equal sized pieces, make each piece into a roll.
  • Place on a parchment sheet. I like to flatten them so they are more like hamburger rolls and better for sandwiches. Brush with oil. Cover with a cloth or piece of plastic wrap and allow to rise in a warmish place for 50-60 minutes or until doubled in size.
  • Bake in a 200 degree oven for 12 minutes.
