3/4 cup sweetened flaked coconut
1/2 cup buttermilk
1/2 cup unsweetened coconut milk
1 tablespoon all-purpose flour
2 eggs
2 egg yolks
1/2 teaspoon vanilla extract
1 lime, juiced and zest minced
1 pinch salt
1 (9 inch) unbaked pie shells

Steps:

  • Preheat oven to 350 degrees F.

3 Tbsp all-purpose flour
1 c buttermilk
3 eggs, slightly beaten
1/4 c butter, melted
1 Tbsp lime zest
juice of 1 lime
1 c coconut
1 unbaked 9-inch deep dish pie crust

Steps:

  • 1. Pre-heat oven to 425 degrees. In a large bowl, combine sugar, flour, and buttermilk. Add beaten eggs. Beat until smooth. Mix in the melted butter, the lime zest and juice, and the coconut. Pour into the pie crust.
