⅓ cup sour cream
1 tablespoon lime juice
1 teaspoon minced fresh ginger root
¼ teaspoon ground cumin
1 dash cayenne pepper

Categories     Fish

Number Of Ingredients 10

MARINADE
4 teaspoons grated lime peel
1/2 cup lime juice
3 tablespoons soy sauce
1/3 cup finely chopped green onions
1/3 cup honey
1/4 cup grated gingerroot
3 garlic cloves, minced
FISH
2 lb. mahi mahi fillets, cut into 8 pieces

Steps:

  • GRILL DIRECTIONS: Heat grill. In small bowl, combine all marinade ingredients; blend well. Place mahi mahi fillets in resealable plastic food storage bag or shallow glass baking dish; pour marinade over fish. Seal bag or cover dish. Let stand at room temperature for 15 minutes to marinate, turning once. Remove fish from marinade; if desired, reserve marinade for basting fish. Place fish on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Brush half of reserved marinade over fish. Cook 4 to 6 minutes. Turn fish; brush with remaining marinade. Cook an additional 4 to 6 minutes or until fish flakes easily with fork. If desired, garnish with lime slices.

Tips:

  • Choose fresh, firm mahi-mahi fillets for best results.
  • Use a sharp knife to score the fish, allowing the marinade to penetrate more deeply.
  • Let the fish marinate for at least 30 minutes, or up to 2 hours.
  • When grilling the fish, cook it over medium heat to prevent burning.
  • Serve the fish with your favorite sides, such as rice, vegetables, or salad.
  • Garnish the fish with fresh lime wedges and cilantro for a pop of color and flavor.

Conclusion:

Lime ginger mahi-mahi is a delicious and healthy dish that is perfect for a weeknight meal or a special occasion. The fish is marinated in a flavorful mixture of lime juice, ginger, garlic, and soy sauce, then grilled to perfection. The result is a tender, flaky fish with a bright and zesty flavor. Serve with your favorite sides for a complete meal.
