TRISH'S LIME JELLO COTTAGE CHEESE AND PINEAPPLE SALAD
Steps:
- Mix Jello, hot water and pineapple together and let partially set. Fold in condensed milk, mayonnaise, cottage cheese and nutmeats. Put in mold and let set in refrigerator. (Bottom of mold may be lined with sliced pineapple and maraschino cherries.) Cut and serve on lettuce leaf or endive. Serves sixteen.
Tips:
- Use fresh pineapple. Fresh pineapple has a brighter flavor and a more tender texture than canned pineapple, and it will make your salad taste its best. If you don't have fresh pineapple, you can use canned pineapple, but be sure to drain it well before adding it to the salad.
- Use a good quality lime jello. The flavor of the lime jello is the star of this salad, so be sure to use a good quality brand. I recommend using a brand that is made with real lime juice, not artificial flavoring.
- Don't overcook the pineapple. The pineapple should be cooked just until it is tender, but it should still retain its shape. If you overcook the pineapple, it will become mushy and lose its flavor.
- Chill the salad thoroughly before serving. This will help the flavors to blend and will make the salad more refreshing.
Conclusion:
This Lime Jello Pineapple Salad is a classic for a reason. It's easy to make, refreshing, and always a crowd-pleaser. The combination of sweet pineapple, tangy lime jello, and crunchy celery is irresistible. This salad is perfect for potlucks, picnics, or any other summer gathering. So next time you're looking for a simple and delicious salad, give this Lime Jello Pineapple Salad a try.
