LINGUINE WITH GORGONZOLA, PROSCIUTTO, AND SPINACH

Linguine With Gorgonzola, Prosciutto, and Spinach image

I modified this recipe to suit our needs that I got from the Bon Appetit archives years ago. This dish is beautiful and delicious enough for company, yet so flexible enough to make everyday. I have played around with it and added tomatoes, olives, artichoke hearts. You can use bacon instead of the prosciutto...changed the cheese to goat cheese or parmasan cheese. The options are endless

Tips:

  • Use high-quality ingredients for the best flavor. Fresh spinach and prosciutto, creamy gorgonzola, and flavorful garlic and shallots will make all the difference.
  • Cook the linguine al dente according to the package instructions. This will ensure that the pasta is firm and not mushy.
  • Don't crowd the pan when cooking the prosciutto and vegetables. If the pan is too crowded, the ingredients will steam instead of sautéing and will not brown properly.
  • Add the spinach to the pan just until it wilts. Overcooked spinach will be slimy and unappetizing.
  • Stir in the gorgonzola cheese until it is melted and creamy. If the sauce is too thick, add a little bit of pasta cooking water.
  • Season the sauce to taste with salt and pepper. You may also want to add a pinch of red pepper flakes for a little spice.
  • Serve the linguine with grated Parmesan cheese and additional chopped parsley, if desired.

Conclusion:

This linguine with gorgonzola, prosciutto, and spinach is a delicious and easy-to-make dish that is perfect for a weeknight meal. The creamy gorgonzola sauce, salty prosciutto, and fresh spinach come together to create a flavorful and satisfying dish that is sure to please everyone at the table.
