This is a quick recipe from our local grocery store's (Giant) 5 in 30 Meal Solutions. In a pinch I've also made this with italian style refrigerated grilled chicken strips (like Perdue) instead of the shrimp. Serve with a tossed salad and some italian bread for great weeknight meal.

1 lb frozen shrimp
1/2 lb linguine
4 garlic cloves, fresh, finely chopped
14 1/2 ounces Italian-style diced tomatoes
1/2 fresh lemon
2 tablespoons olive oil
salt
pepper

Steps:

  • Defrost shrimp under cold running water 3-5 minutes. Pat Dry.
  • Cook pasta according to package directions.
  • While pasta is cooking, heat 2 tablespoons of olive oil on low in large skillet.
  • Add garlic to skillet and cook for 1 minute (do not brown).
  • Add shrimp and cook 2 minutes on medium.
  • Add diced tomatoes and cook and additional 2 minutes.
  • Season with salt and pepper to taste.
  • Squeeze lemon juice over top.
  • Toss with cooked pasta.

3 cups canned Cannelloni white beans
1/4 cup plus 2 tablespoons extra-virgin olive oil
16 large shrimp, peeled (tail left on) and deveined
4 cloves garlic, sliced
1 small serrano chile, thinly sliced or 1/2 teaspoon chili flakes
1 cup peeled, seeded and diced fresh tomato, canned or fresh
1 cup whole basil leaves
1 tablespoon lemon juice
Salt and freshly ground black pepper
2 tablespoons Italian flat-leaf parsley, chopped
Best-quality extra-virgin olive oil, for drizzling

Steps:

  • Drain the beans over a bowl and reserve the liquid. Put the white beans in a large skillet with just enough of their liquid to moisten them. Add 2 tablespoons of the olive oil and bring the beans to a low simmer. Keep them warm while you prepare the shrimp.
  • Heat 1/4 cup oil in a large skillet over high heat. Add the shrimp, season with salt and cook for about 1 minute, tossing frequently. Remove the shrimp with tongs to a bowl. Add the garlic to the pan and saute until the garlic browns. Add the serrano chile or chili flakes and cook for 1 minute. Add the tomato and basil and stir briefly, then add the lemon juice. Season with salt and pepper. Cook for about 1 minute, and then stir in the shrimp. Toss well and cook briefly to reheat the shrimp. Remove the shrimp mixture to a plate and sprinkle with parsley.
  • Spoon the white beans on a platter or individual plates. Drizzle them with the best olive oil you have, and then top with the shrimp. Serve warm.

1 lemon, zested
1 pound linguine pasta
2 tablespoons olive oil
2 shallots, diced
2 garlic cloves, minced
16 ounces frozen shrimp
1/4 cup lemon juice (about 2 lemons)
1 lemon, zested
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
3 ounces arugula (about 3 packed cups)
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • For the lemon oil:
  • Combine the olive oil and the lemon zest in a small bowl and reserve.
  • For the pasta:
  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta, reserving 1 cup of the cooking liquid.

2 tablespoons salted butter
6 cloves garlic, minced
1 pound shrimp
1 small yellow onion, diced
½ cup sliced fresh mushrooms
½ cup white wine
5 ounces oil-packed sun-dried tomatoes, drained and cut into strips
3 cups baby spinach leaves
1 ¾ cups half-and-half
⅔ cup freshly grated Parmesan cheese
2 teaspoons dried Italian herb seasoning
1 tablespoon water
1 teaspoon cornstarch
1 tablespoon chopped fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain and keep warm.

1 1/2 lbs large shrimp, shelled and deveined
1/2 cup olive oil
3 garlic cloves, minced
fresh ginger, peeled (1/4 inch piece)

1 cup dry white wine
2 tablespoons chopped fresh flat leaf parsley
1 lb linguine

Steps:

  • Rinse shrimp and pat dry; cut each shrimp into ½ inch pieces.
  • Add oil to a skillet large enough to hold all of the cooked pasta.
  • Add in garlic, ginger, and crushed red pepper; cook over medium heat until garlic is golden, about 2 minutes.

1 lime, zested and juiced
2 teaspoons ground black pepper, divided
1 teaspoon Cajun seasoning
1 teaspoon salt, divided
1 pound peeled and deveined shrimp
1 tablespoon olive oil
1 pound chorizo sausage links, sliced
1 (16 ounce) package linguine pasta
4 cloves garlic, minced
1 cup white wine
1 ½ cups chicken stock
2 teaspoons ground cumin
¼ cup chopped fresh cilantro
