This is a traditional German recipe from the Bavarian region. You may substitute the beef liver with lamb or pork liver since the recipe I found says those have milder flavors.

Time 40m

Number Of Ingredients 8

1 lb chicken livers
1 c all purpose flour
1/2 lb buttery crackers , about 40 crackers
1/2 tsp parsley flakes
1 medium onion
3 large eggs, slightly beaten
1/2 tsp salt
2 qt chicken broth, low salt

Steps:

  • 1. Put livers, onion and crackers through food grinder. Add beaten eggs, flour, salt, parsley and pinch of pepper, and mix well. Drop by teaspoon into 2 quarts of boiling chicken broth and simmer for 30 minutes. Note: If you drop them in the broth and it doesn't stay together, add a few more cracker crumbs.

Tips:

  • Carefully select your liver: Choose a fresh, high-quality liver from a reputable butcher or grocery store. Look for a liver that is smooth, firm, and free of any discoloration or bruising.
  • Soak the liver in milk: This will help to remove any impurities or bitterness from the liver.
  • Grind the liver finely: This will ensure that the dumplings are smooth and tender.
  • Use a light touch when mixing the dumpling batter: Overmixing will result in tough dumplings.
  • Drop the dumplings into the boiling soup: This will help to prevent them from sticking together.
  • Cook the soup until the dumplings are cooked through: This will take about 10-15 minutes.
  • Serve the soup hot, garnished with fresh parsley or chives: Enjoy your delicious and nutritious liver dumpling soup!

Conclusion:

Liver dumpling soup is a classic comfort food that is easy to make and packed with flavor. The combination of the rich, savory liver and the light, fluffy dumplings is simply irresistible.
