LA ISLA'S STUFFED FRENCH TOAST

2 tablespoons soft unsalted butter, plus additional for sauteing
4 ounces cream cheese, room temperature
1 1/2 tablespoons guava marmalade, plus additional for drizzling (recommended: LaFe)
5 ounces diced strawberries
3 ounces guava shells (recommended: LaFe)
4 thick slices Pullman-style bread, refrigerated
Powdered sugar, for dusting
6 extra-large eggs
1 tablespoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
2 tablespoons sugar
1 teaspoon vanilla extract
4 ounces whole milk
4 ounces evaporated milk
10 ounces corn cereal (recommended: Cornflakes)
6 ounces sliced almonds

Steps:

  • In a medium bowl, using a hand beater, beat the 2 tablespoons of butter, and the cream cheese until combined. Add the marmalade and mix until incorporated, then fold in the strawberries and guava shells, using a rubber scraper. Transfer the mixture to a pastry bag fitted with a large tip.
  • Make an incision (pocket) on the crust side of the 4 pieces of bread about 3/4 of the way through. The incision will allow you to stuff the pocket. Leave the slices with the incision, covered, at room temperature before stuffing. Gently stuff the room temperature slices with the filling. Refrigerate the stuffed slices with the pocket opening facing up for 20 to 30 minutes.
  • Preheat oven to 375 degrees F.
  • Egg batter:
  • Add all the ingredients to a medium shallow bowl and mix well.
  • French Toast:
  • Add the corn cereal and almonds to a sheet pan and crush together. Dip the bread slices in the egg batter and then into the cereal mixture.
  • Put a large skillet on medium-high heat and add 3 to 4 tablespoons butter. When the butter has melted add the stuffed bread slices and brown on 1 side, then flip and put the skillet in oven for 8 minutes. Remove the skillet from the oven and transfer the toast to a serving platter. Drizzle with guava marmalade and a dusting of powdered sugar before serving.

1 loaf brioche bread, cut into 3 in slices
1 cup granulated sugar
8 cups heavy cream
2 vanilla beans, seeds scraped
6 large eggs, beaten
½ cup cream cheese, softened
½ cup ricotta cheese
½ cup strawberry, quartered
½ cup strawberry, quartered
½ lemon, juiced
1 teaspoon granulated sugar
½ lemon
½ cup blueberry
¼ cup maple syrup
1 cup heavy cream
2 tablespoons granulated sugar
½ teaspoon vanilla extract
½ cup turbinado sugar
4 fresh mint leaves
kitchen torch

Steps:

  • Make the French toast: Using a paring knife, make a small slit in the side of each slice of bread, going almost to the other side, but not all the way through. Set aside.
  • In a large pot over medium heat, combine the granulated sugar, heavy cream, and vanilla bean seeds and bring to a simmer. Whisk until the sugar is dissolved and the mixture is warmed through, about 5 minutes.
  • Add the eggs to a large bowl. Slowly a ladleful of the cream mixture and whisk to temper the eggs so they do not scramble. Remove the cream mixture from the heat and slowly stream the egg mixture into the pot, whisking to combine. Let cool to room temperature.
  • Arrange the sliced brioche in a 9 x 13-inch (19 x 27 cm) baking dish. Pour the cooled custard mixture over the bread. Let soak for at least 1 hour.
  • Preheat the oven to 350°F (180°C).
  • Transfer the soaked brioche to a clean 9 x 13-inch (19 x 27 cm) baking dish. Bake for 35-40 minutes, or until golden brown on top. Remove from the oven and let cool to room temperature.
  • While the toast bakes and cools, make the filling: In a medium bowl, combine the cream cheese, ricotta cheese, and strawberries. Beat with an electric hand mixer on medium speed until fully combined and fluffy. Transfer to a piping bag fitted with a large round tip and chill in the refrigerator until ready to use.
  • Make the macerated strawberries: In a separate medium bowl, combine the strawberries, lemon juice, sugar, and lemon zest. Stir well, then set aside to macerate for 10 minutes.
  • Make the chantilly cream: In a separate medium bowl, combine the heavy cream, sugar, and vanilla. Beat with an electric hand mixer on medium speed until soft peaks form.
  • Pipe the ricotta and cream cheese mixture into the center of each slice of French toast, being careful not to overfill.
  • Top each slice of French toast with a generous sprinkle of turbinado sugar. Brûlée the sugar with a kitchen torch until melted and golden brown.
  • Add the blueberries and maple syrup to the macerated strawberries and stir to combine.
  • Garnish each slice of brûléed French toast with a spoonful of the berry mixture, a dollop of chantilly cream, and a mint leaf. Serve immediately.

5 ½ teaspoons white sugar
¼ teaspoon salt
2 cups milk
1 cup all-purpose flour
2 quarts vegetable oil for frying
8 thick slices (1-inch thick) French bread

Steps:

  • Beat the eggs, sugar, and salt together in a mixing bowl. Whisk in the milk, followed by the flour; whisk until smooth.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).

A light & fluffy coating on thick slices of Texas Toast, filled with a lightly sweetened cream cheese with a hint of almond flavoring. This is a recipe I created this morning. DH & I were watching the Food Network last night & saw mention of a restaurant that serves deep fried french toast but no recipe or hints on how it was made. It sounded interesting enough to play around with so I browsed my kitchen & made a few notes on what to try this morning. I had Texas Toast & some cream cheese on hand & it occurred to me that I could make a filling to stuff the extra thick slices of bread with. This is the final result. We loved it & I hope you enjoy it too! *Note - I used a deep fryer for this but you could easily do it in a deep sided pan on the stove or a deep sided griddle. We tried these with my blueberry/raspberry syrup from Recipe #22066, with lazyme's Recipe #330075, store-bought orange marmalade and maple syrup.

4 ounces cream cheese, softened
1/4 teaspoon almond extract
3 tablespoons powdered sugar
10 slices Texas toast thick bread (or other thick sliced bread)
1 cup all-purpose flour
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
2 eggs
oil (for frying)
powdered sugar (optional, for garnish)

Steps:

  • In stand up mixer or in small bowl, combine cream cheese, almond extract and powdered sugar until fluffy.
  • Fit a cake decorating bag with a large tip (star or round) and fill with cream cheese mixture. Set aside.
  • Using a serrated bread knife, slice each piece of Texas Toast into half on the diagonal.
  • Along the newly cut diagonal edge, use the tip of the knife to gently make a one inch slice into the center of the bread, making sure the slice runs parallel to the top and bottom of the bread.
  • Insert the decorator tip into the opening & squeeze out about a teaspoon or so of filling. With a thumb & finger, gently pinch the opening to close it back up & cover the filling. (This could also be done with a ziplock baggie with a corner cut off, although not quite as easily.).
  • In mixer or another medium bowl, combine flour, cinnamon, nutmeg, baking powder and salt.
  • Beat in milk and eggs until batter is smooth. Pour into deep wide bowl or into a pie plate, for dipping.
  • Pre-heat deep fryer or griddle (about 350°) and when ready dip filled slices of bread into batter, turn once and place into fryer basket. (Mine will hold two slices at a time.)
  • Fry 2 minutes or until lightly browned & crispy looking then turn each slice over with a pair of tongs and fry the other side for 2 minutes or until done.
  • Remove with tongs to paper towel lined plate to drain. Sprinkle with powdered sugar, if desired.
  • Repeat with the rest of the slices.
  • Serve immediately (careful - filling is hot) with your choice of syrups, jams or jellies.

1 8-ounce package cream cheese, at room temperature
1/3 cup fruit jam (such as sour cherry)
1/4 cup slivered almonds, plus more for garnish
1 loaf challah bread
4 large eggs
1 cup milk
1 tablespoon packed light brown sugar
1 teaspoon pure almond extract
2 tablespoons unsalted butter
Pure maple syrup, for serving

Steps:

  • Preheat a cast-iron griddle or skillet over low heat. Preheat the oven to 300˚ F. Combine the cream cheese, jam and almonds in a bowl and beat with a mixer on medium-high speed until combined.
  • Slice the challah into 2-inch-thick slices. With a paring knife, make a 1/2-inch horizontal slit in the bottom crust of each slice to form a deep pocket. Using a butter knife, fill each slice with some of the cream cheese mixture. Set aside.
  • Whisk the eggs, milk, brown sugar and almond extract in a baking dish. Dip the stuffed challah slices in the egg mixture to fully coat, about 30 seconds per side.
  • Increase the griddle heat to medium. Add the butter and let it melt, then add the stuffed challah to the griddle. Cook until golden brown, about 4 minutes per side. Transfer to a rack set on a baking sheet and keep warm in the oven until ready to serve. Garnish with almonds and serve with maple syrup.

A culmination of several recipes over the years, this is another delicious breakfast that is made the night before; sparing the chef from getting up early or messing up the kitchen first thing. Serving size is listed as 6-8, but I serve with bacon or sausage & possibly scrambled eggs so we usually get 10 servings out of it. Can also be halved & made in a 9x9 brownie pan to serve a family of 3-4.

1 loaf bread, cut into 1-inch cubes (buttermilk or potato recommended)
4 cups strawberries, quartered (fresh or frozen)

2 teaspoons almond extract
1/2 teaspoon nutmeg

Steps:

  • Spray a 13x9 baking dish with non-stick cooking spray.

  • Remove from refrigerator & let stand 20-30 minutes before baking. Preheat oven to 350°. Bake uncovered 50-60 minutes. Let sit 10 minutes before slicing.
  • For Syrup (can be made fresh or in advance, refrigerated, and reheated for serving):.
  • In a saucepan, combine sugar and cornstarch; add water.
  • Bring to boil over medium heat and boil for 3 minutes, stirring constantly.
  • Stir in strawberries and reduce heat. Simmer for 8-10 minutes or until thickened. Stir in butter and serve over french toast.
