2 tablespoons extra-virgin olive oil
8 cups uncut baby spinach, raw
2 tablespoons minced garlic
1/3 cup chicken broth
2 teaspoons sea salt
2 teaspoons freshly ground black pepper
2 teaspoons grated Parmesan

Steps:

  • Heat olive oil in medium stock pot, when hot add spinach and chopped garlic. Cook until fully wilted, then add chicken broth and reduce. Season with salt and pepper.
  • Garnish with the Parmesan and serve immediately.

This is my personal recipe, and it has won over 12 chili cook-offs, and I figured I'd share. It is a medium steak and bean chili. If I had to compare it, it would be similar to Steak N' Shake's chili, but better! It's rather involved, but trust me. Worth every minute! Try it. You will not be disappointed!

1 ½ cups onion soup, prepared from a packet of dry onion soup mix
¼ cup bacon grease (see notes)
1 ½ pounds boneless beef round steak, cut into 1/3-inch cubes
1 ½ pounds beef sirloin steak, cut into 1/3-inch cubes
1 teaspoon salt
1 tablespoon chili powder
2 teaspoons ground cumin
½ teaspoon ground black pepper
3 (15 ounce) cans kidney beans, undrained
1 (6 ounce) can tomato paste
1 (8 ounce) can tomato sauce
2 teaspoons unsweetened cocoa powder
1 cup cola soft drink (such as Coke®)
1 tablespoon yellow sport pepper sauce (such as Texas Petes's®)

Steps:

  • Prepare soup from a packet of onion soup mix according to the package directions, and set 1 1/2 cups aside.
  • Place bacon grease into a large stainless steel soup pot over medium-high heat, and cook and stir the cubed round and sirloin steak meat in the bacon fat until well browned, about 10 minutes. Pour in the reserved onion soup, bring to a boil, then reduce to a simmer and cook for 7 minutes, stirring to dissolve any browned flavor bits from the pot.
  • Stir in salt, chili powder, cumin, black pepper, kidney beans, tomato paste, and tomato sauce. Bring the mixture to a boil, stirring frequently to avoid burning the bottom, then cover, reduce heat to low, and simmer for 1 hour, stirring occasionally. Stir in the cocoa powder, cola, and hot sauce, and simmer for 20 more minutes. Serve hot.

If you don't want to use the crockpot, just make everything in a large pot, cover and let simmer on low for at least an hour. I have included some of Lori's favourite ingredients in this hearty soup and I hope that she and you like it. Enjoy!

2 lbs extra lean ground beef
2 cups onions, diced (1 large onion, can use white, red or a combination)
1 cup celery, diced
2 garlic cloves, minced
1/3 cup low-sodium taco seasoning (I use CoffeeB's Taco Seasoning Mix with less salt)
2 cups beef broth (may need more)
1 cup corn
1 (19 ounce) can chickpeas (or your preferred bean)
1 (19 ounce) can kidney beans (or your preferred bean)
1 (10 ounce) can mushrooms, sliced, with juice
1 (28 ounce) can tomatoes, crushed or diced
cheddar cheese, grated (optional)
avocado, diced (optional)
tortilla chips, broken (optional)

Steps:

  • In a nonstick pan, lightly brown ground beef. If you are using anything other than extra lean beef, you may want to strain off the fat now. Add onion, celery and garlic and saute for about 5 minutes.
  • Add taco seasoning and beef broth and simmer for 15 minutes. This will infuse a lot of flavour into the ground beef. Meanwhile, add remaining ingredients to the crockpot. You can add the liquid from the beans or not - I did.
  • Add ground beef mixture to the crockpot. If you find that there isn't enough liquid, add more beef broth. I cooked it on low for 6 hours, but I can't imagine why it can't be cooked longer. The longer you cook soups in a crockpot, the better they taste!
  • If you can taste the soup partway through, you may want to season it to your tastes at this point. Add some freshly ground pepper, chili powder or any of your favourite spices or seasonings.
  • Top with grated cheese and diced avocado and tortilla chip pieces if you wish.

2 tablespoons vegetable oil
2 cups chopped onions
Salt
Cayenne
2 pounds stew meat, cut into cubes
1 tablespoon chili powder
2 teaspoons ground cumin
Crushed red pepper
2 teaspoons dried oregano
2 tablespoons chopped garlic
3 cups crushed tomatoes
1/4 cup tomato paste
8 cups beef stock
2 tablespoons masa flour
4 tablespoons water
1 cup canned dark red kidney beans
1 bag tortilla chips
1 1/2 cups grated Monterey Jack cheese
6 tablespoons sour cream
1 small jar jalapenos

Steps:

  • In a large saucepan, heat the vegetable oil. When the oil is hot, add the onions and saute for 3 to 5 minutes, or until the vegetables start to wilt. Season with salt and cayenne. Stir in the stew meat, chili powder, cumin, crushed red pepper, and oregano. Brown the meat for 5 to 6 minutes. Stir in the garlic, tomatoes, tomato paste, and beef stock. Bring the liquid up to a boil and reduce to a simmer. Simmer the liquid, partially covered for 1 1/2 hours, stirring occasionally, or until the beef is tender. Skim off the fat occasionally.
  • Mix the masa and water together. Slowly stir in the masa slurry, add the beans, and continue to cook for 30 minutes. Reseason with salt and cayenne. Place a handful of the chips in each shallow bowl. Spoon the chili over the chips. Garnish with the grated cheese, sour cream and jalapenos.

LORI'S FLEXIBLE CHILI

I got this mild chili recipe from my mom, and its changed even since then! I seem to make it a little different every time. The only rule was to always use at least 3 cans of beans, with the one staple being chili beans for flavor. You can also add in anything else you want: corn, garbanzo beans, etc. Here is how I (usually) make mine! Please note that the seasonings are an estimate.

1 lb ground beef (or turkey)
1 onion, chopped
1 green pepper, chopped
1 (15 1/2 ounce) can black beans
1 (15 1/2 ounce) can chili beans
1 (15 1/2 ounce) can dark red kidney beans
1 (14 1/2 ounce) can diced tomatoes
1 tablespoon Worcestershire sauce
1 teaspoon dried chipotle powder
4 tablespoons chili powder
2 tablespoons black pepper

Steps:

  • In a 2 qt sauce pan, combine meat and onions.
  • Brown meat.
  • Add in green pepper, half of chili powder and half of black pepper. Cook for additional 2 minutes on high.
  • Add in all beans and tomatoes. Stir together.
  • Add in Worcestershire sauce, chipotle chili powder, rest of chili powder, and rest of black pepper.
  • Bring to a boil, cover and reduce heat to low.
  • Cook for 20 minutes.
  • Serve with any garnishments you choose. (Mine are corn chips, shredded cheese and sour cream!).

I have searched far and wide for a recipe that compares to Goldstar or Skyline chili, to no avail. Finally, I took a number of decent recipes and blended them together with the help of a former Goldstar Chili employee. It's still not the same, but it feeds my cravings. The most important things about the chili is how you prepare the beef and the cinnamon and chocolate. I recommend refrigerating the chili overnight. It always tastes better the next day.

1 quart water
