6 boneless skinless chicken breasts
1/2 cup chopped green onion
1/2 cup chopped celery
1 -2 clove minced garlic
1/2 cup butter
1/4 cup sherry wine
1/2 cup crushed herbed croutons
2 tablespoons parsley
1 tablespoon dill weed
2 tablespoons flour
1/2 cup half-and-half
1/4 teaspoon paprika
1/4 teaspoon lemon-pepper seasoning
salt
1 cup lump crabmeat (optional)

Steps:

  • Place chicken between waxed paper sheets and roll until flat and uniform in size.
  • Sprinkle with lemon pepper and salt.
  • Saute green onion, celery and garlic until tender; add sherry, croutons, crab, parsley and dill weed.

1/4 cup chopped pecans
1/4 cup chopped celery
42 saltine crackers, coarsely crushed
1 small Granny Smith apple, peeled, chopped
1/4 cup finely chopped dried apricots
1 Tbsp. chopped green onions
1/2 tsp. ground black pepper
1/4 tsp. dried thyme leaves
8 small boneless skinless chicken breasts (2 lb.), pounded to 1/4-inch thickness
1 cup apricot preserves
1/4 cup orange juice
2 Tbsp. HEINZ Apple Cider Vinegar

Steps:

  • Heat oven to 350°F.
  • Melt butter in large skillet on medium-high heat. Add nuts and celery; cook 2 to 3 min. or until celery is crisp-tender, stirring occasionally. Remove from heat. Stir in cracker crumbs, apples, apricots, onions, pepper and thyme.
  • Place chicken, smooth sides down, on work surface; top each with 1/3 cup nut mixture. Roll up, starting at one short end of each; secure with wooden toothpicks. Spread any remaining nut mixture onto bottom of 13x9-inch pan sprayed with cooking spray; top with chicken. Cover.
  • Bake 30 min. (Chicken will not be done.) Meanwhile, mix preserves, orange juice and vinegar until blended. Reserve 1/2 cup preserves mixture; spoon remaining over chicken. Bake 15 min. or until chicken is done.

½ cup shredded Monterey Jack cheese
½ small onion, chopped
2 ounces cream cheese, softened
2 cloves garlic, crushed

4 (5 ounce) skinless, boneless chicken breast halves

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place jalapeno peppers on a microwave-safe plate. Microwave on high power until soft but still plump, 1 to 2 minutes. Remove and discard seeds. Dice peppers.
  • Mix diced peppers, Monterey Jack cheese, onion, cream cheese, garlic, and cumin together in a bowl.

8 1/2 ounces crushed pineapple
6 boneless skinless chicken breast halves
2 tablespoons butter
1 red bell pepper, chopped fine
3 green onions, chopped
1 tablespoon parsley, chopped
2/3 cup hot water
6 ounces chicken flavor stuffing mix
2 tablespoons brown sugar
2 tablespoons cider vinegar
1 tablespoon fresh ginger, grated
2 tablespoons butter

2/3 cup hot water

Steps:

  • Drain pineapple but reserve the juice. Set aside.

1 pound bone-in chicken thighs

1/2 pound sliced fresh mushrooms
1 medium onion, chopped
1 medium green pepper, chopped
1 celery rib, chopped
1 jalapeno pepper, seeded and finely chopped
4 garlic cloves, minced
4 cups chicken stock
