LOW-CARB BUTTERMILK BREAD (A B M)
This is a based on a recipe in my Cuisinart Convection Bread Maker Recipe Booklet using the low-carb cycle. This is so delicious and healthy! Love it! The default instructions are for the 2 pound large loaf; I've listed quantities for the 1 1/2 pound medium loaf in parens. I cannot vouch that this recipe will work in a bread machine without the low-carb cycle.

LOW-CARB BREAD RECIPE BY TASTY
If you're on a low-carb diet, it's worth your time to try your hand at this low-carb bread recipe. It's made with almond flour, eggs, and oil, and contains about a third of the carbs of regular bread. It's moist and dense and works perfectly as breakfast toast or for your lunch sandwich preparation.

Steps:
- Proof yeast in warm water.
- Place the butter or margarine and buttermilk in a small saucepan. Heat slowly until butter or margarine has melted. Cool to lukewarm.
- Place sugar, salt, baking soda, buttermilk mixture, and yeast in large mixing bowl. Add 3 cups flour one cup at a time, and mix with the dough hook attachment of an electric mixer. Gradually add the remaining flour while continuing to mix. When dough is not sticky, turn out on a lightly floured surface. Knead for several minutes, until the dough is soft and smooth. Place in a greased bowl, and turn once. Allow to rise until doubled in size.
- Punch down the dough. Divide, and shape into 2 loaves. Place in two well greased 8 x 4 inch bread pans. Allow to rise until dough has risen one inch above pans.
- Bake in a preheated 375 degrees F (190 degrees C) oven for 30 to 35 minutes. Loaves are done when nicely brown and hollow sounding when thumped.

NUTTY LOW-CARB BREAD (A B M)
This is a delicious and healthy bread based on a recipe that came in the Recipe Booklet accompanying my Christmas present: the Cuisinart Convection Bread Maker! I cannot guarantee that this will work in a non-convection bread machine. This is for the large 2 pounder; the medium 1.5 pounder ingredients are in parens. Make sure that all ingredients are at room temperature, unless noted otherwise.

BUTTERMILK WHITE BREAD
This a great white bread recipe for your bread machine. The use of dried buttermilk powder allows the use of the delayed timer feature of your bread machine. Wake up to fresh bread!

Tips:
- Use fresh buttermilk: Fresh buttermilk will give your bread a better flavor and texture. If you don't have fresh buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk and letting it sit for 5 minutes.
- Don't overmix the dough: Overmixing the dough will make the bread tough. Mix the dough just until the ingredients are combined.
- Let the bread rise in a warm place: The bread will rise best in a warm place, such as a sunny windowsill or near a warm oven. If your kitchen is cool, you can preheat the oven to 100°F (38°C) and then turn it off before putting the bread in to rise.
- Bake the bread until it is golden brown: The bread is done baking when it is golden brown and a toothpick inserted into the center comes out clean.
Conclusion:
Low-carb buttermilk bread is a delicious and healthy alternative to traditional white bread. It is easy to make and can be enjoyed by people with diabetes, celiac disease, or who are simply looking to reduce their carb intake. This bread is also a good source of protein and fiber, making it a filling and satisfying snack or meal.
