A jambalaya for the low-carb and paleo crowd. It's rice free, with extra veggies to make up the volume. Just as delicious and flavorful as traditional jambalaya, without the insulin spike!

LOW CARB CROCK POT JAMBALAYA
I found this recipe on a low carb recipe site and I served it last night (my husband has been begging me to make Jambalaya and I finally found a low-carb version). It was excellent, easy to make, and had a nice kick to it (I added extra hot sauce, which might explain why it had a nice kick to it :-). If you are not eating low-carb, then I am sure you can add some rice to it (or serve it on top of rice). Enjoy!

Steps:
- Add all ingredients, except shrimp, and stir well.
- Cook on low for 6-8 hours (or on high for 3-4 hours).
- If shrimp is uncooked, add to crock pot for last hour (low) or last 1/2 hour (high).
- If shrimp is cooked, add to crock pot for last 15 mins of cooking time.
Tips:
- Use a variety of proteins. Chicken, shrimp, and sausage are all popular choices for jambalaya, but you can also use other proteins, such as fish, pork, or tofu.
- Don't overcrowd the crock pot. If you're using a small crock pot, you may need to cook the jambalaya in batches. Otherwise, the ingredients won't cook evenly.
- Cook the jambalaya on low heat. This will help to prevent the ingredients from burning.
- Add the rice last. This will help to prevent the rice from becoming mushy.
- Season the jambalaya to taste. You may need to add more salt, pepper, or other spices, depending on your personal preference.
Conclusion:
Jambalaya is a delicious and versatile dish that can be made in a crock pot. By following these tips, you can make a jambalaya that is perfect for a weeknight meal or a special occasion.
