Time 20m

Yield 16 cookies, 16 serving(s)

Number Of Ingredients 4

1 cup peanut butter
1 cup sugar substitute
1 egg
1 teaspoon vanilla

Steps:

  • mix ingredients in a small bowl.
  • drop by rounded teaspoons onto cookie sheet.
  • bake at 350 degrees for 12 minutes or until set.

Tips:

  • Use a low-carb sweetener: This recipe uses a combination of erythritol and stevia, which are both low-carb sweeteners. You can use other low-carb sweeteners, such as monk fruit or xylitol, if you prefer.
  • Don't overmix the dough: Overmixing the dough will make the cookies tough. Mix the ingredients just until they are combined.
  • Chill the dough before baking: Chilling the dough will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies at a low temperature: Baking the cookies at a low temperature will help them cook evenly without burning.
  • Let the cookies cool completely before serving: The cookies will be soft and chewy when they are first out of the oven, but they will firm up as they cool.

Conclusion:

These low-carb peanut butter cookies are a delicious and satisfying treat that you can enjoy without guilt. They are easy to make and can be customized to your liking. Whether you like them soft and chewy or crispy and crunchy, these cookies are sure to hit the spot.
