5 eggs, whites and yolks separated
1 cup sugar
1 lemon, juice and rind of, grated
2 teaspoons cinnamon
1 pinch salt
12 ounces tender carrots, finely grated
3/4 cup cornstarch
4 ounces cream cheese
3/4 cup whipping cream
1/2 cup powdered sugar

Steps:

  • Preheat oven to 370 F (190c).
  • Grease a 9 inch pan.
  • Beat egg whites until stiff and then slowly pour in 1/2 cup of sugar, beating constantly.
  • In another bowl, beat the egg yolks and the remaining sugar then add lemon rind, lemon juice, salt and cinnamon, beating continuously.
  • Add in the carrots, corn starch and mix.
  • Add the egg whites to the mix slowly and small amounts at a time mixing continuously in a top to bottom rotating movement.
  • Pour the batter into the pan.
  • Level the surface with a spatula (do not pressure it though and move very lightly).

1 cup quick-cooking oats
3/4 cup carrot, grated
1 -2 teaspoon cinnamon
1 teaspoon baking soda
1/2 cup unsweetened applesauce
1/3 cup raisins
1/4 cup artificial sweetener (you can use honey if you like, just adjust the points for it)
1/4-1/3 cup water (if you dough is still too dry, just keep adding water one tablespoon at a time until it is stiff)

Steps:

  • Mix all the dry ingredients together first.
  • Add in the carrots, applesauce, water, an raisins.
  • Spray cookie sheets with non stick, butter flavored cooking spray and drop by heaping teaspoonfuls onto the cookies sheets 1 1/2 inches apart from one another. Make sure to flatten the cookies slightly because they will not really "spread out" at all.

1 1/2 cups carrots, grated
1/4 cup crystallized ginger, finely chopped
2 1/2 cups Bob's Red Mill gluten-free all-purpose baking flour (2 cups for batter, 1/2 cup for dusting carrots and ginger)
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 1/3 cups granulated sugar
1/4 cup light brown sugar, firmly packed
3 medium eggs
2 (4 ounce) containers applesauce (plain, no sugar or flavorings added)
3/4 cup yogurt, Greek-style, plain nonfat
1 tablespoon canola oil

Steps:

  • Preheat oven to 350°F.
  • Spray (2) 9 inches round cake pans with cooking spray. Line bottoms and sides with parchment paper cut to fit pans (the better the fit, the easier the turn out).
  • In a bowl, combine carrots and ginger, and dust with 1/2 cup flour. Toss with fingers, making sure that all pieces are coated with flour. Retain excess flour; do not discard.

1 teaspoon baking soda

1 egg, slightly beaten

1 (8 ounce) can crushed pineapple, well drained
1 1/2 cups grated carrots (squeeze out some of the moisture with hands)
1/2 cup raisins
