It's the secret ingredient that makes this bread pop. This loaf won't last a day in your house, so it's best to double or triple the recipe to ensure everyone gets a slice! The loaf freezes well, just slice before freezing.

Tips:

  • For a moist and flavorful zucchini bread, use fresh zucchini that has been grated. Zucchini that is too old or watery will make the bread dense and heavy.
  • Be sure to measure your flour correctly. Too much flour will make the bread dry and crumbly. To measure flour accurately, spoon it into a measuring cup and level it off with a knife.
  • Don't overmix the batter. Overmixing will develop the gluten in the flour, making the bread tough. Mix the batter just until the ingredients are combined.
  • Bake the bread at the correct temperature. If the oven is too hot, the bread will brown too quickly and the inside will be undercooked. If the oven is too cool, the bread will take too long to bake and will be dry.
  • Let the bread cool completely before slicing and serving. This will help the bread to set and hold its shape.

Conclusion:

This low-fat lemon zucchini bread is a delicious and healthy way to enjoy zucchini. It is moist, flavorful, and packed with nutrients. With its low-fat content, this bread is a great option for those who are watching their weight or who have heart health concerns. The lemon and zucchini give this bread a unique and refreshing flavor that is sure to please everyone. So next time you have some zucchini on hand, try making this low-fat lemon zucchini bread.
