LOW FAT STEVIA BANANA BREAD

Low Fat Stevia Banana Bread image

I love banana bread and this is an easy, healthy version that my family really enjoys. One tip - if you're bananas aren't ripe enough for banana bread just pop them in the oven (in the peel) until they darken up. It brings out the sugars and gives them that sweet flavor needed for great banana bread.

Yield 12

Number Of Ingredients 9

⅔ cup white sugar
¼ cup margarine, softened
2 eggs
1 cup mashed bananas
¼ cup water
1 ⅔ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray one 9x5x3 inch loaf pan with a non-stick cooking spray.
  • In a medium bowl, beat the white sugar and margarine or butter until smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until it is well blended.
  • Mix in the flour, baking soda, salt and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients.
  • Bake at 350 degrees F (175 degree C) for about 60 minutes. Bread is done when the top is firm to the touch and a golden brown color. Time will vary according to loaf size and oven type. When bread is removed from oven, allow it to cool on it's side for 10 minutes, then remove from pan and let cool on a rack. This bread is also excellent if you add mini chocolate chips or small fruit pieces to the mix just before baking.

Tips:

  • Use ripe bananas. The riper the bananas, the sweeter and more flavorful your banana bread will be.
  • Don't overmix the batter. Overmixing can result in a tough, dense loaf of bread.
  • Use a loaf pan that is at least 9x5 inches. A smaller pan will result in a thicker, denser loaf of bread.
  • Bake the bread at 350 degrees Fahrenheit for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool completely before slicing and serving. This will help to prevent the bread from crumbling.

Conclusion:

This low-fat, stevia-sweetened banana bread is a delicious and healthy way to enjoy a classic treat. With its moist texture, sweet banana flavor, and hints of cinnamon and nutmeg, this bread is sure to be a hit with everyone who tries it. So next time you're looking for a healthy and satisfying snack or breakfast, give this low-fat, stevia-banana bread a try. You won't be disappointed!
