1 package (8 ounces) reduced-fat cream cheese, softened
1 carton (8 ounces) reduced-fat whipped topping, thawed
3 cups cold fat-free milk
2 packages (1 ounce each) sugar-free instant vanilla pudding mix
2 pints fresh strawberries, halved

Steps:

  • In a large bowl, beat cream cheese until smooth. Beat in whipped topping on low speed until smooth; set aside. In another large bowl, combine milk and pudding mixes. Beat on low speed for 2 minutes. Let stand for 5 minutes. Stir in cream cheese mixture until smooth. Set aside 1 cup of strawberries. Fold remaining strawberries into pudding mixture. Transfer to a serving bowl or individual dessert dishes. Cover and refrigerate for at least 2 hours. Arrange remaining strawberries on top.,

I wanted to make my father a nice dessert for Father's Day this year. My father loves home made cakes and fresh fruit, my girlfriend LOVES strawberries, and my mom, (whose lost over 75 pounds!) can't have high calorie/fat desserts. This was my attempt to make something to that everyone could enjoy! I adapted this from Kraft Food and Family magazine to make it a bit more figure friendly.

1 cup skim milk, divided
1/2 cup low-fat sour cream
3 tablespoons sugar
2 1/4 cups Jiffy baking mix
1 (3 1/2 ounce) package fat free sugar-free instant cheesecake pudding mix (vanilla flavored works too)
8 ounces light whipped topping, thawed, divided
4 cups strawberries, washed and sliced
1/3 cup Splenda granular (sugar substitute)

Steps:

  • Preheat oven to 425°F.
  • Mix 1/2 cup of the skim milk, sour cream and 3 tbsp sugar in a large bowl.
  • Stir in the dry biscuit mix until well blended.
  • Spread evenly into a greased 9-inch round cake pan.
  • Bake 12-15 minutes or until top is golden.
  • Remove from pan and cool completely on wire rack.
  • Mix strawberry slices and 1/3 cup Splenda in a bowl and set aside.
  • Combine the dry pudding mix and remaining 1/2 cup skim milk adn mix well.
  • Gently stir in half of the whipped topping until well blended.
  • When cake has cooled, carefully slice in half horizontally to make 2 layers.
  • Place bottom of cake on a serving plate, and top evenly with half of the strawberry mixture.
  • Spread top of strawberries with the pudding mixture and top with the top cake layer.
  • Spread remaining whipped topping on top of cake and top with remaining strawberries.
  • Serve immediately!

This is a light, refreshing dessert that is almost fat-free! This can be made with other flavors of gelatine and complementary fresh fruits, such as raspberry, melons, peach, kiwi, blueberries, banana, etc. Chilling in refrigerator is not counted in preparation time.

1 (3 ounce) package strawberry gelatin
1 cup water
1/2 cup nonfat sour cream
4 teaspoons Equal sugar substitute
1 cup fresh strawberries
4 teaspoons granulated sugar
1/2 cup fat-free whipped topping
4 pinches ground nutmeg

Steps:

  • Save 4 whole strawberries for garnish, and slice the remainder.
  • Set aside.
  • Microwave 1 cup water until hot.
  • Pour hot water over gelatine and sweetener in a small bowl, stirring until gelatine is dissolved.
  • Refrigerate mixture 5-10 minutes to cool gelatine.
  • Place sour cream in bowl.
  • Add 1/4 of gelatine mixture and whisk until sour cream and gelatine are well-mixed and creamy.
  • Slowly pour remainder of gelatine into sour cream mixture, whisking continuously to blend.
  • Pour gelatine mixture into an greased 8x8-inch glass casserole.
  • Refrigerate until set.
  • With a sharp knife, cut into small squares.
  • With a spatula, release squares from the bottom of glass dish.
  • TO SERVE: In four stemmed glasses, divide ingredients, placing gelatine cubes in the bottom.
  • Top with sliced strawberries, then whipped topping, ending with a whole strawberry.
  • Sprinkle 1 tsp sugar over the top of each dessert.
  • Place a pinch of nutmeg over top.
