Number Of Ingredients 15

8 slices Texas toast thick bread
4 -5 tablespoons butter, melted
tomato peach chutney
4 slicesthick sliced pepper bacon, cooked and halved
6 -8 ounces fresh mozzarella cheese, sliced 1/4-inch thick
4 crisp leaves butter lettuce, center vein removed
1 medium sweet onion, chopped (1/2 cup)
2 tablespoons minced garlic
2/3 cup water, divided
3 cups large cherry tomatoes
2 medium peaches, peeled, pitted and coarsely chopped (1 1/2 cups)
2 tablespoons cider vinegar
2 tablespoons packed brown sugar
1 teaspoon sea salt or 1 teaspoon kosher salt
1/4 teaspoon crushed red pepper flakes

Steps:

  • Chutney - n a large skillet over medium-high heat, cook the onion and garlic with 1/3 cup water for 5 minutes until softened. Add the tomatoes. Simmer, uncovered, 10 to 15 minutes or until mixture thickens slightly, stirring occasionally.

  • 2. Heat a grill pan over medium heat. Place sandwiches on heated pan. Cook 2 to 3 minutes on each side or until golden, turning once.
