⅓ cup chopped water chestnuts
3 green onions, chopped
4 tablespoons reduced-sodium soy sauce
2 tablespoons rice vinegar
3 cups shredded cabbage
2 large carrots, grated
18 lumpia wrappers
olive oil cooking spray

Steps:

  • Heat oil in a large skillet over medium-high heat. Add pork and cook until browned, about 5 minutes, breaking it into small pieces. Add water chestnuts, green onion, soy sauce, and vinegar; cook for 5 additional minutes.
  • Increase heat to high and add cabbage. Cook until cabbage is soft and liquid has evaporated, about 2 minutes. Turn off heat and stir in grated carrots. Let mixture cool for 3 minutes.

½ cup finely chopped carrots
½ cup finely chopped water chestnuts
2 cloves garlic, minced
2 tablespoons soy sauce
½ teaspoon salt
¼ teaspoon ground ginger
16 spring roll wrappers
avocado oil cooking spray
