Fantastic chicken enchilada recipe with lots of cheddar and Monterey Jack cheeses, olives, corn, diced green chilies, diced green onions, sour cream, and cream of chicken soup. Wonderful Tex-Mex main dish.

Steps:
- Combine soup, chilies, onion, sour cream, olives, corn and ¾ of both cheeses.
- Set aside 2 cups of this mixture.
- Add diced chicken to remainder of mixture.
- Put about ½ cup chicken mixture on each tortilla.
- Fold, tucking sides in, and place seam-side down in greased casseroles.
- (Leave a little room between each one if possible).
- Spoon the reserved mixture over top the tortillas.
- Top with remaining cheeses.
- Sprinkle with paprika.
- Cover with foil and bake at 350° for about 20-30 minutes.
- Remove foil, bake about 5-10 minutes longer.
- Yield: 20 enchiladas (or chalupas).

Steps:
- First, place tortillas in a deep dish and pour one can of chicken stock over so that they can soak while you prepare the remainder of the dish.
- (use cold stock or tortillas will get mushy) Melt butter in saucepan, stir in flour and then add one can chicken stock and pour off remaining stock from tortillas into this saucepan.
- Cook until slightly thickened over med-high heat and then add jalapenos.
- Turn heat off then stir in sour cream- mix thoroughly.
- Layer ingredients in a 9 x 13 casserole as follows: four (4) tortillas to completely cover bottom (I tear them in half to cover),1/3 of the chicken, 1/3 of the sauce 1/3 of the onions and then 1/3 of the cheese; repeat until all layers are used ending with cheese on top.
- Sprinkle with paprika Cover tightly and place in refrigerator overnight (it will work if left refrigerated for 8 hours).
- Bake at 350 degrees for one hour (remove cover half-way through baking).
- Probably best to let stand for 15- 20 minutes before cutting into serving pieces.

LYDIA'S RED ENCHILADAS CON CHORIZO
Steps:
- In a large pot over medium heat, boil the chiles in water for 15 minutes, or until soft. Drain. Put the softened chiles in a blender with 3 cups of fresh water; blend for 2 minutes. Pour mixture through a large mesh strainer and let the juice drip into a medium-sized glass bowl. In a medium-sized pot over medium heat, heat 2 tablespoons olive oil, strained chiles, and the remaining 1 cup of water; cook approximately 5 minutes. Once simmering, stir in the bay leaves, salt, bouillon, onion, garlic, and pepper. Let the mixture simmer for 5 to 10 minutes.
- In a small pan over medium-high heat, brown the chorizo, no added grease needed. Add the browned chorizo to chile sauce.
- In medium pan over medium heat, fry the corn tortillas, a few at a time, in the remaining 2 tablespoons olive oil. Let dry on paper towels.
- To serve, dip 1 tortilla in the chile sauce to cover, place on a plate, and top with the cheese. Repeat the procedure for the remaining 2 tortillas, stacking the tortillas on top of each other. Top each stack with chorizo. Repeat with the remaining tortillas.

- In a skillet over medium heat, brown meat. Add taco seasoning, salsa, and jalapeno juice. Add a little water if mixture is too dry. Reduce heat to low and simmer for 10 minutes.
- In another skillet, heat Canola over medium-high heat. Fry flour tortilla shells flat until crispy on both sides. Place tortillas on a flat plate. Cover in meat, then cover meat with cheese, and melt cheese under broiler, about 2 minutes. Remove plate and cover cheese with shredded lettuce, then tomatoes, and olives. Place dollops of guacamole and sour cream in center.
